Haupia (Coconut Pudding)
This is a Polynesian coconut desert. For those of you who love coconut with will be a recipe for you to try. Growing up on the Hawaiian Island of Oahu, this was a childhood favorite and was a must have at every family Luau. I remember being a little kid and hiding the tray of the pudding so that I could have it all to myself. The recipe is relatively easy to make.
There are only a few ingredients and are simple to find in your local grocery store and the coconut milk can be found in the Asian Food Isle.
1/3 cup sugar
1/3 cup cornstarch
1/8 teaspoon salt
2 1/2 cups coconut milk
Cobine all the ingridients into a medium pot and cook on low heat the mixture has thickened. Depending on how think you want the slices to be would depend on how deep your dish is. Pour the mixture into your dish let cool then refrigirate the Haupia till it is firm.
