Thai pork dish with sticky rice
Laab (pronounced lob)
This is a delicious Thai dish made with pork, if you like spicy food then you will love this dish of course you can make it without the peppers and still enjoy it. It is fast and simple to make. This is the Americanized version without fish sauce, you can also add fresh mint but I prefer it without the mint.
1 lb of ground pork
1 bunch of fresh cilantro
5-6 fresh green onions
2-5 habenero peppers
sticky rice (available at Asian food markets)
(The rice is not regular rice thats sticky, but rather a type of Thai rice)
salt to taste
Place your sticky rice in a rice steamer and while its steaming you can prep the ingredients.
Finely chop a medium size bunch of cilantro leaving out the stems placing it in a bowl. chop the green onions including about half of the green part put in bowl with the cilantro.finely chop the habenero peppers also adding to the bowl. squeeze 4 limes into the bowl and mix it all together and taste, the lime should be a bit strong to the taste if its not add more juice, once its added to the pork it will tone down some. place in refrigerator until the pork is done.
Add a small amount of oil in skillet and fry the pork until its done remove from heat and add the mixture to it and stir.
once the rice is done ( after about 13 minutes) serve. You can either mix the rice into the pork or eat side by side, It is traditionally eaten by picking up the rice with your fingers and grabbing the pork mixture.
