Healthy Dish: Sweet and Sour Pineapple Tofu
Pineapple is one of the world’s favorite tropical fruits. It has interesting sweet aroma and seductive smell. You can eat pineapple raw but you also can combine pineapple with many cook foods. Let try one of yummy healthy dish with pineapple: The sweet and sour pineapple tofu.
- 2 cloves garlic, minced
- 2/3 cup pineapple juice
- 8 ounces firm tofu, cubed
- 1 handful fresh or canned pineapple chunks
- 2 fresh small tomatoes, cubed
- oil, as needed
- corn starch, as needed
- Salt and pepper
- 2 tsp tomato sauce
- Green onion
- ½ cup of water
- Sugar and vinegar (optional)
Step 1: Sprinkle a little bit of salt on the tofu cubes then toss them with corn starch.
Step 2: You can deep fry tofu cubes in canola oil or bake them in the oven for a healthier dinner. The fried version is more "authentic" or just more indulgent.
Step 3: In a pan, mix a little bit of oil and minced garlic. Stir fry for few seconds then add fresh tomatoes and tomato sauce. Add ½ cup of water, salt and pepper for seasoning, then boil the mixture until pineapple soft.
Step 4: Pour in the fried or bake tofu in the mixture in step 3, cook for 2 minutes. Add pineapple and stir gently. Turn off the heat. Sprinkle chopped green onion.
Note: If pineapple is not sweet enough and tomato sauce is not sour enough you can add a tiny bit of sugar and vinegar.
