Healthy Gluten Free Peanut Butter Chocolate Overnight Oats
I admit, I'm definitely not a morning person. I've also never been a huge breakfast person, which is bad because it is the most important meal of the day! For years I just ate cereal and instant oatmeal. But now I've discovered something so much better and healthier, yet still easy to make!
It's like dessert for breakfast but it's healthy!! Healthy Gluten Free Peanut Butter Chocolate Overnight Oats are also vegan! This simple meal is a great way to start your day! Overnight oats are a fantastic way to make a healthy breakfast for those who are always in a rush in the morning. Overnight oats can easily be much healthier than instant oatmeal and can also be easily tailored to your liking.
Below is a recipe I came up with for overnight oats. It's only four ingredients, yet it tastes like a delicious chocolate treat. I use to make this recipe gluten free. The chia seeds give a dose of omeg-3s and healthy fats while also thickening up the oatmeal. The peanut butter adds some protein and a great taste to go along with the dairy free chocolate almond milk from Bob's Red Mill Gluten Free Old Fashioned Rolled Oats. The process is so simple! Add all the ingredients into a bowl before bedtime, throw it in the refrigerator and let sit overnight. By morning the oats have soaked up some flavor and its ready to be eaten cold or heated up in the microwave for a hot breakfast.
If you know you'll be in a rush in the morning and can't eat till you get to work, just put the overnight oats in a mason jar or tupperware the night before and you're all set to grab it and run out the door in the morning. I can't stress enough how easy it is!

- 1/2 Cup Gluten Free Rolled Oats
- 1/2 Cup Chocolate Almond Milk
- 1 teaspoon Chia Seeds
- 2 Tablespoons Peanut Butter
- Grab a bowl and add in oats, chia seeds and peanut butter.
- Next add in the chocolate almond milk and stir to mix ingredients. Make sure all the oats are submerged in the almond milk.
- Place in the refegerator, let sit over night (or at least six hours). Stir before eating cold or heat up in the microwave for hot oatmeal on cold days. Enjoy!
