While just making it a little early to my gate so I can catch my breath, grab a coffee and donut and gather my thoughts I noticed a very attractive and together looking woman. I noticed that she had glowing skin, bright smile and eyes and possibly been a dancer in her past judging by her posture and poise. What was her secret? She obviously was a travel and road warrior like the most of us; but she had a secret...

This flawless beauty continued to get glances from all that came near and of all the things I could be wondering, it was ...What did she eat on the go?

I couldn’t take it any longer and I had no doubt that this stunning beauty got approached all of the time.This time would be no different. She was obviously well traveled and experienced, judging by her travel wear and baggage. She did not seem to be the least bit fatigued or stressed from being on the go like many others, myself included.

I moved in closer and excused myself. I asked this beautiful woman how she managed to eat well while traveling. She invited me to sit down so we could talk further. She then shared a wonderful story about her travels to the Mediterranean and her new found knowledge of the Mediterranean diet (life style change) “gold standard” way of eating to promote lifelong good health. I didn’t know what this had to do with traveling, but I listened...

What I Learned...

Simple Kale Chip Recipe

As one of the most nutritional green vegetable there is it is only fitting to make it our healthiest most crispy snack.

The first thing you begin with is clean baby kale. You will fold your leaf and cut the thick vein from between the leaf with kitchen scissors. Pat dry your leaves and spray with olive oil spray.

Toss in bag with your favorite seasoning and place into a 400 degree oven until slightly brown on both sides. I like to place my leaves onto another dish when I flip them. Make a batch of these and soon you will be begged for more after your first share!

Materials:

  • baby kale
  • olive oil sprayer
  • bakers sheet
  • parchment paper
  • seasoning

Directions:

  1. Preset oven to 400 degrees
  2. Place parchment paper in pan
  3. Place in dried, oiled and seasoned baby kale
  4. Turn when slightly brown
  5. Take out when slightly brown
  6. ENJOY !

Healthy Cabbage Wrap Snack Recipe

When you want to stay away from the gluten and breads a cabbage wrap is the way to go. After boiling this baby for 5 minutes the leaves will become easy to manipulate creating you the best wrap substitute you can find.

Directions:

Preheat oven to 375 degrees. Precook ground turkey and rice. Mix all of your ingredients together.Always wrap with the stem down. Place your mixture in the middle and wrap the bottom up first. Sides next, then roll firmly up and place seams onto the pre-oiled bakers pan first. You can use foil to line your bakers pan for easy clean up.

Materials:

  • Cabbage

  • tong
  • olive oil
  • Badia seasoning
  • handful of raisins
  • brown/jasmine rice
  • 1 lb ground turkey

2. Place cabbage into a pot of boiling salt water for 5 minutes before removing leaves with a tong.

You can freeze the rest of your wraps and store them until your ready.

Spring Rolls a great way to get children to eat vegetables!!

The wraps you see beneath the Kale chips above is made with the remainder of cabbage that was left over. The (spring rolls)cabbage was finely chopped along with 1/4 cup of shredded carrots, onions and seasoning to create healthy egg roll veggie wraps.

  • Nasoya egg roll wrap
  • cabbage
  • pinch of ginger
  • cilantro
  • 2 tablespoon chopped onions
  • 1/4 cup of carrots

Directions:

  1. Preheat oven to 400 degrees.
  2. Pre-oiled bakers pan or lined with parchment paper.
  3. Place mixture in middle of wrap.
  4. Fold bottom up first then sides.
  5. wet top with wet fingertips before wrapping.
  6. Place onto bakers pan.
  7. Continue until done
  8. Pierce each wrap with tip of two prong fork.
  9. Mist with olive oil before placing into oven.
  10. Bake until browned on both sides.

Hopefully you will have much enjoyment out of these healthy snacks for adults on the go. Sharing them with your family as an easy to make meal is an awesome idea as well. Enjoy!
