Healthy Make-Ahead Wheat Waffle Mix
I'm all about eating healthy, but I'm also all about being frugal. Unfortunately, those two concepts don't usually mix well!
I was buying Bob's Red Mill Organic 7 Grain Pancake & Waffle, Whole Grain Mix, on Amazon. It was the cheapest I've seen it, about $4.36 a bag (bought in a 4 pack box). Well, I just ran out, and money is too tight to order any more right now. So, as a substitute, here's what I came up with. You can probably add flax meal and wheat germ; try substituting a 1/2 cup of wheat flour for the flax meal.
Healthy make ahead waffle mix:
6 cups of white flour
6 cups of whole wheat flour
12 teaspoons of baking powder
6 tablespoons of stevia or splenda
1 teaspoon of salt
Whisk ingredients together and store in air tight container for up to 6 months
To make waffles:
1 1/2 cup mix
1 cup of milk
4 tablespoons of canola oil
2 large eggs, beaten
Author's note: If you are low on eggs, I made these with just one egg and they turned out fine!
Mix ingredients together until well blended. Cook according to your waffle maker's instructions. Makes about 4 servings.
These are yummy with a little butter and sugar-free syrup. Both my kids love these waffles. Enjoy!
