What Is It That Makes Catfish So Popular?

In case you're wondering Tuscaloosa Catfish is deep fried to a golden brown and then it is smothered with a peppered white gravy. It is usually served with rice and cornbread. The lemon can be added as a garnish or you can squeeze the fresh lemon juice on your catfish.

I'll often make fish and chips out of catfish. Slice your potatoes into small thin slices and cook them in the deep fryer until they are golden brown. Sprinkle your deep fried potato slices with seasoned salt and enjoy.

Beer Battered Deep Fried Catfish

Here's a recipe that is popular all over the American south. For your recipe you will need.

1. One Cup All Purpose Plain Flour.

2. One Cup Selfrising Yellow Cornmeal.

3. One Tablespoon Baking Powder.

4. One Tablespoon Ground Sea Salt.

5. One Teaspoon Ground Cayenne Pepper.

6. One Twelve Ounce Bottle Amber Beer.

7. Catfish Filets.

Mix all your ingredients but the catfish in a blender or food processor. Mix it up until it is very well mixed together.

In another bowl mix together a half cup of all purpose plain flour, a half cup of self rising yellow cornmeal and salt and pepper to taste.

When you have your deep fryer hot and everything mixed up and ready dip your catfish filets first into the beer batter and then into the bowl of dry mixture. Shake off any excess batter and then deep fry until golden brown and done.

You'll find that you now have some of the most delicious catfish that you'll ever eat in your life. Serve it with homemade slaw, hushpuppies, and hand cut potatoes for one of the most delicious meals you'll ever eat in your life. All you need is homemade lemon merigune pie and you have a feast fit for a king.

How About Some Delicious Fried Catfish

Catfish Filets can be cooked so many ways and over the years I've tried to come up with the best ways to cook catfish filets and I think I've come up with the best way ever to cook catfish filets. You see I've always wondered about those secret spices and ingredients in some peoples recipes so I figured I would come up with my own secret ingredients.

I tried several different secret ingredients before I came up with the one that I think really works. And once you try my recipe for fried catfish filets I think you'll agree that I just may have come up with the perfect secret ingredient for frying catfish. In case your wondering my secret ingredient is finely pureed pecans added to the breading. Once you put the breading together and fry your catfish I think you'll agree that I've come up with the best recipe ever for frying catfish.

Let me talk to you just a minute or so about your pecans. You want to take about half of a cup of pecans and puree them as fine as you can get them in your food processor. And for your breading purposes you want your pecans to be as fine as you can get them. When I puree my pecans I get them almost to the consistency of corn meal and I come up with the most delicious fried catfish you'll ever taste.

For Your Catfish You Will Need

In Bowl 1.

1. One Large Egg.

2. One Cup Of Buttermilk.

You want to pour your egg and buttermilk into a blender or food processor and mix it until it is very well mixed together. Then pour your buttermilk mixture back out into the bowl.

In Bowl 2.

1. One Fourth Cup Pecans Pureed Very Fine.

2. One Cup Self Rising Flour.

3. One Tablespoon Self Rising Corn Meal.

4. One Teaspoon Ground Sea Salt.

5. One Teaspoon Ground Black Pepper.

6. One Teaspoon Ground Cayenne Pepper.

7. One Teaspoon Lemon Zest.

Mix all your dry ingredients together so that they are well mixed.

When your ready to fry your catfish wash your catfish filets or nuggets off well and then dip the catfish filets or nuggets into the milk and egg mixture and then put them into the dry mixture. Take them out of the dry mixture and shake off any excess breading.

If your going to be frying fish often consider buying yourself a home deep fryer with a thermostat so you can set it at 350 degrees for frying fish. You should also have a hand held thermometer so you can check the temperature of your cooking oil to be sure your oil is at 350 degrees before you start to fry your fish. You never want to try to use oil below 325 degrees for deep frying fish.

You want to deep fry your fish until it is golden brown. Then remove it from the deep fat fryer and allow your fish to drain well on paper towels. Canola Oil is a little more expensive but its the perfect oil for home deep frying and for cooking fish and seafood.

I think you'll find that the pureed pecans will give you some of the most delicious fried catfish that you will ever taste. You always want to fry your catfish in new oil and you'll end up with some of the most delicious catfish you'll ever eat. Another of my secrets about delicious fried fish is I make my own homemade tartar sauce and below is the recipe for my homemade tartar sauce.

1. One Cup Of Your Favorite Mayonnaise.

2. 3 Tablespoons Chopped Dill Pickle.

3. 2 Tablespoons Very Fine Chopped Fresh Parsley.

4. 1 Tablespoon Tarragon.

5. 2 Tablespoons Red Sweet Onion Finely Minced.

6. 2 Tablespoons White Wine.

7. 1 Teaspoon Ground Sea Salt.

8. 1 Teaspoon Ground Black Pepper.

9. 1 Tablespoon Lemon Juice.

You will want to add all your tartar sauce ingredients to a blender or food processor and blend until very well mixed. Chill for at least four hours in the refrigerator before you serve with your fried fish.

I think you'll find that the combination of the deep fried catfish and the homemade tartar sauce are oh so delicious. Over the last 40 years I have been studying cooking and frying it and I really do think I've come up with some of the best methods ever for cooking fish, oysters, and more. I have been told by many people that I make the best fried fish and oysters ever. I am also quite often told the same thing about my hush-puppies.

Once you fry your catfish and hush-puppies be sure to drain them well on paper towels on a plate or try. Buy yourself a container of Old Bay powdered seasoning and add a teaspoon or two to your fish breading flour and see how you like that.

When I make hush-puppies I always puree my onion very smooth and I always use either sweet purple or red onion. If you'll puree your onions you'll find that the hush-puppies will have much more flavor.
