Holiday Leftovers

With another holiday around the corner, it is time to get cooking. We cook a lot and it is usually too much. Here are a few ideas to jazz up your leftovers so they don't go to waste and taste the same. Most of us will have a refrigerator full of leftovers that we have no idea what to do with. A turkey dinner is great for a day or maybe even two, but you need to use up the leftovers in a new way so you don't feel like you are eating the same thing over and over again.

Stuffin Muffins

Taking your leftover stuffing, pack some baking cups half full and crack an egg over the top. Add a little cheese and bacon bits to the top and Bake at 350 for 10 minutes or so. Simple and easy breakfast that your kids will love!

Turkey

Barbecue Turkey Hoagies

Simply shred some breast meat and cook on low in some BBQ sauce. A nice accommodation would be some grilled onions and peppers with a strong white cheese like asiago or parmesan. Turning your drab into fab.

Turkey Tacos

Add a little cumin and chili powder to some cut up turkey and make soft tacos for dinner. You may even be able to use up some veggies left over on the veggie tray. If tacos aren't for you, you can also pan fry some meat and cheese in tortillas and make a quick and flavorful quesadilla.

Mashed Potato Soup

Take 2 cups of mashed potatoes and heat on medium with a cup of milk and the ham bone. Adding a teaspoon of butter and 2 american cheese slices when fully heated and serve. A great soup for a cold day and easy to make.

      Looks like some yummy ideas for after Thanksgiving. I know these ideas would be great anytime, but Thanksgiving usually renders a lot of leftovers of the sort you mention here.

      That mashed potato soup sounds like a good way to use leftover mashed potatoes. My mom use to fry them into patties, but they weren't really tasty.
