Smoked Turkey Wedges with Cranberry
This simple tasty recipe only takes 10 minutes to prepare and 8 to 10 minutes to cook.
2 soft taco size flour tortillas
1 1/2 cups shredded Italian cheese
1 cup diced smoked turkey
4 tablespoons dried cranberries
4 tablespoons real bacon pieces
2 green onions, thinly sliced
Preheat oven to 425 degrees. Place tortillas on a large baking sheet and top with cheese, turkey, cranberries, bacon, and green onion. Bake 8 to 10 minutes or until the cheese is slightly brown around the edges. Remove from oven and use a pizza cutter or knife to cut each tortilla in half or in thirds. Serve right away.
Curried Chicken Skewers
This tasty recipe takes about 20 minutes to prepare and another 10 minutes to cook.
1 pound boneless, skinless chicken breasts
20 bamboo skewers (8 inch), soaked in water
1 cup honey
3 tablespoons lime juice
2 teaspoons curry powder
1 teaspoon crushed red pepper flakes
Just a snipet of chives to garnish
Cut chicken into small flat strips. Thread strips onto the tops of the skewers to form a small portion. (approximately 2 bites each). Season with salt and pepper. Stir together the honey, lime juice, curry and red pepper in a bowl. Set aside about 1/4 cup of this mixture. Grill or broil skewers for 4 to 5 minutes on each side until slightly charred, brushing the larger amount of the honey mixture frequently during the grilling process. Remove chicken skewers from grill and place ona platter. Drizzle the reserved honey mixture and sprinkle with chives. Mkaes 20 delicious skewers.
