Recipe for Easy Buffalo Chicken Calzone
This is my healthy (and more delicious, if I do say so myself) alternative to the buffalo chicken calzone we order often from our favorite pizza shop in town, which I believe they fry.
Start by getting a ball of your favorite pizza dough, whether it be store bought or your own recipe, that's up to you. I used a garlic dough.
Now pull it out into a circle as if you're making a pizza. I don't have a rolling pin, and don't seem to need one. I prefer using a dough that has a nice elastic texture that I can pull in circles around the edges.
Now your filling..
I made mine in the crock pot. It took about 4 hours. I put 5 or 6 fresh all-natural chicken breasts in my crock pot and covered them with an entire bottle of Frank's Red Hot Buffalo Sauce and let them sit on high heat. I kept stirring them around and making little fork stabs every hour or so. I added some crumbled blue cheese at about 3 hours and switched it to low heat for the final hour. After it was finished I added more blue cheese and a little more sauce and let it sit in the refrigerator until I was ready to make my calzone.
But, I'm sure there are other good ideas for your filling. Whatever way you decide to do, you want to spoon it onto half of your circle, like so
Next, fold the empty side over the side with the delicious filling. Pinch or fold up the sides ALL around, making sure you won't get any leaks during the baking.
Now all that's left is to give it a light coat of olive oil. You can use a pastry brush if you have one, I don't, so I just used my fingers and it worked fine. Then bake it at the recommended time and heat for your dough. Once it was finished baking I served it with Newman's Own Ranch Dressing.
It's a beautiful thing.
