Horseradish Recipe - Making Some Relish
- 1 cup horseradish, diced
- 3/4 cup white vinegar
- 1/4 teaspoon salt
- 1 teaspoon sugar
Horseradish is a plant that produces an enlarged root. The root is dug out of the ground. It is washed, peeled and diced to make it easier to process.
I had a root that produced about a cup of chunks. I added a bit of salt, some vinegar and some sugar.
Warning: horseradish produces a gas when you start to puree, so start your machine in a well ventilated area. I went to my garage.
Don't throw away the peels. They all root. Place them back on your horseradish patch. Cover with a bit of dirt. It's going to grow.
I haven't made this for about 17 years. I made one jar. That will last us for a while. We used to eat this on crackers pretty regular. It gives some people heartburn.
