Green Beans and Carrots

This is an easy recipe for green beans and carrots, with just a few instructions to follow. If you have a spare 30 minutes you can whip this combo up. I love to keep a large jar of hot and spicy vegetables in the fridge for snacking. The veggies keep for several weeks and add a tasty touch to lunch, dinner or an afternoon snack. For those on a diet, these vegetables really satisfy your hunger and possess few calories. There are several ways to make these veggies, but I have found my own formula that both my husband and I enjoy. You can also try this recipe with cauliflower, zucchini and sweet peppers.

Some of the Ingredients

Add hot Jalapeno peppers

Slice the onions very thinly

Yields: Makes 12 servings

Ingredients

  • 2 Cups Diagonally cut carrots
  • 1 Cup Fresh green beans
  • 1 Sliced onion
  • 4 Jalapeno peppers
  • 3 Cups White or Cider Vinegar
  • 1 Cup Water
  • One-quarter Cup Fresh Oregano
  • Two Large Chopped Garlic Cloves
  • One Tablespoon Dried Basil
  • One Tablespoon Seasoned Salt
  • One teaspoon Cumin powder
  • One teaspoon Cayenne pepper, Optional

Instructions

  1. Steam the carrots, green beans, onions and jalapeno peppers until they are crunchy but tender. Set the vegetables aside.
  2. In a large pot put vinegar, water and all spices. Cook until the boiling point and remove from the stove.
  3. Pour the vegetable mixture in a very large jar with a lid and pour the liquid mixture over the veggies. When the mixture cools store in the refrigerator. You can see how this is such an easy recipe for pickled carrots and green beans.
