The spicy chicken marinates in the spices for an hour before being cooked.
The chicken legs and thighs I used are cheap and very tasty and make a wonderful meal for four. I take the skin off before I start but its your choice.
Ingredients for the marinade:
1teaspoon of Garam Masala This is a mixture of spices, sometimes, cumin,coriander seed,paprika,turmeric, etc.
1 teaspoon each of the following,
sat and pepper
About 50 mls of cooking oil
1 small onion
2 cloves of garlic.
A tablespoon of corn flour mixed with cold water.
1 tablespoon of hot chilli sauce.
Put the chicken in an oven proof dish.
Mix the dry spices with the oil and rub over the chicken.
Add the chopped onion to the dish and chop the garlic and spread it around.
Let it marinate in the refrigerator for an hour.
Cooking the chicken
Pre-heat the oven to maximum temperature, then cover the chicken in hot water. put a lid over the chicken and put the dish in the centre of the oven.
After 20 minutes turn the temperature down to gas mark 2, 90C or 300F.
Cook for an hour then take it out of the oven and add the corn flour dissolved in cold water and the chilli sauce.
Replace in the oven and cook for another hour.
Serve with potatoes and veg of your choice.
This spicy chicken is really delicious.
