Hot apple and peppermint tea
Loads of vitamin C and fibre from the apples, plus stress-relieving and digestion-improving chemicals in the mint, make this a deliciously nutritious warming drink. Yes, this is a juice which is served warm, giving the mint a chance to fill your kitchen with its wonderful aroma. (Serves 2)
Eating apples: 4-5 or 500ml commercial apple juice
Fresh peppermint: 1 large stem, plus 2 sprigs to garnish
Wash and juice the apples (there is no need to peel them if they are organic) / Bruise the peppermint stem by pressing with the back of a large wooden spoon / Put the juice and mint into a saucepan and warm gently (don't allow to boil) / Scoop out the mint / Serve with the mint sprigs on top.
Poured into a vacuum flask, this juice is warming in the middle of the day.
