Hot Soup on a Hot Day

Italian Chicken & Rice Soup

Every day I look outside I know that it is summer time, the temp says it, the news says it, and when I go out of the house I can feel it. Today it was 100 degrees so I decided to stick around the house, but as the day moved on it got cold in my house so cold that I had to put on a jacket...really my family keeps the house that cold so cold that for my midday meal i decided to make a pot of homemade soup.

Just think about it a nice bowl of hot soup to warm you up in the middle of the summer.....sounds funny don't it, but that just how it was on this pretty summer day in my ice cold house, The coldness of winter time took me back a few months, to like December and I started making this very tasty Italian Chicken & Rice Soup, its a hearty soup that you can use as a main meal so turn up your air in the house bring the winter in and make this great tasting soup.

Italian Chicken and Rice Soup

Italian Chicken and Rice Soup

1 tablespoon olive oil

4 (4 to 5- ounce) boneless, skiless chicken breasts, cut into 1-inch pieces

3 cans (14.5 ounces each) chicken broth

1 package (16 ounces) frozen mixed vegetables (such as broccoli, cauliflower and carrots)

1 can (15 ounces) tomato sauce

2 teaspoons Italian seasoning

1 teaspoon garlic powder

2 cups brown rice

1/2 cup grated Parmesan cheese

In large skillet, heat oil over medium-high heat. Add chicken, cook and stir2 to 3 minutes or until chicken is browned. Place chicken in 4-to5-quart slow cooker. Stir in broth, frozen vegetables, tomato sauce, Italian seasoning, garlic powder and freshly ground pepper to taste

Cook covered, on low 8 to 10 hours or high 4 to 5 hours. About 1 hour before soup s done, cook rice according to package directions; stir into slow cooker. Heat through. Ladle into soup bowls and top each serving with Parmesan.
