How To Make Bechamel Sauce
To some people making a Bechamel Sauce is hard but it shouldn't be. The one thing you need to always keep in mind is that you need to start with equal parts of plain all purpose flour and butter. I almost always use unsalted butter but you don't have to. I've even used margarine right of the refrigerator.
In case you don't know Bechamel Sauce is also known as white sauce and in French cooking it's known as the mother sauce. A lot of people get scared when making Bechamel and other sauces but their really is no reason to be scared. Because guess what. You can easily make Bechamel Sauce. It's one of the easiest to make sauces that their is. And no it doesn't take a rocket scientist to make it. In fact a 12 year old boy or girl should be able to make it with a little instruction. But trust me the first time a old Greek Chef bellowed at me make me some Bechamel Sauce I was scared to death.
But I quickly remembered what I had been taught about making Bechamel Sauce and I quickly had a great Bechamel Sauce made. Below is a very easy recipe for making Bechamel Sauce.
Ingredients For Bechamel Sauce.
1. One Fourth Cup All Purpose Plain Flour.
2. One Fourth Cup Unsalted Butter.
3. Five Cups Whole Milk At Room Temperature
You need a thick bottom sauce pan and a wire whisk to make your Bechamel Sauce with. What I'm going to do here is try to walk you through making a very basic Bechamel Sauce because once you make it you'll be able to make it again and again.
You just about have to have a thick skillet and a wire whisk. You also want to make sure for your first Bechamel Sauce that you use all purpose plain flour and unsalted butter. Get everything together and have it setting there beside the stove. It's very important when making recipes to get everything together and in place before you get started.
Let all your ingredients come up to room temperature before you start making your Bechamel Sauce. I know some people will tell you to use scalded milk for making Bechamel Sauce but their is no reason to. It's perfectly fine to make it like I do and it will turn out perfect each and every time.
Put your butter in the skillet first and allow it to melt completely before you proceed with the recipe. You want the burner to be set on about medium.
Add your all purpose plain flour in a little at a time being sure to whisk it in with a wire whisk after you add each addition of flour. Never turn that burner above medium. Yes I know it takes a while to cook it and get it to mix up real well.
When you have all the flour in the pan you want to add the milk a little at a time and use your whisk as your adding it in. That milk must be at room temperature for this to work right.
And you must stand there and pay careful attention to the Bechamel Sauce the entire time your making the Bechamel Sauce. If you walk off from it or start talking on the phone you might as well throw it away and start over.
Now once you get all the milk worked into the sauce pan and you've kept it very well stirred you'll end up with the most delicious Bechamel Sauce that you've ever had. And yes it really is that easy to make. The important things are to never leave the pan while your making the Bechamel Sauce and use all purpose plain flour.
I'll put my Bechamel Sauce up against anyone's and I know mine is perfect. No one makes it better. No not anyone. But you can make some just as good if you'll follow those instructions.

Delicious Clams, Baby Shrimp, Spaghetti And Bechamel Sauce.
Spaghetti With Clams, Baby Shrimp, And Bechamel Sauce Topped With A Little Mozzarella Cheese.
Once you know how to make the Bechamel Sauce which I describe how to make above you can try a wonderful dish like Spaghetti with Bechamel Sauce, Clams and Shrimp.
I make the spaghetti by the package directions and and I use a can of baby shrimp that I drain well and a can of drained baby clams. I put a teaspoon of butter and a teaspoon of minced garlic in a skillet and then I add the drained baby clams and the drained baby shrimp.
I cook the clams and shrimp until they are heated through. Then I add enough Bechamel Sauce to the pan to almost fill it up and heat thoroughly. I put a nice serving of the spaghetti noodles onto each plate and then I stir the Bechamel Sauce with the clams and shrimp in it and then I add the Bechamel Sauce to each plate and then I sprinkle the top of each plate with fine chopped fresh basil. With a green salad and garlic bread you'll have a wonderful meal.
Crock Pot Lasagna With Bechamel Sauce.
For this crock pot lasagna I use a spaghetti sauce used called Prego Meat Sauce because it makes it easy for anyone to make this delicious lasagna. I take the below.
1. One Cup Diced Button Mushrooms.
2. One Fourth Cup Purple Or Red Sweet Onion.
3. One Fourth Cup Diced Bell Pepper.
I put those ingredients into a skillet with a couple of tablespoons of olive oil and I fry the veggies until they are soft but not over cooked. I then add them to my Prego Meat Sauce and stir to mix well.
I make my Bechamel Sauce and have it setting there to use in my crock pot lasagna. I mix a sixteen ounce container of Ricotta Cheese with a empty Ricotta Cheese carton full of Mozzarella Cheese and I mix the two cheeses together.
I have a box of lasagna noodles and no you don't have to cook those noodles ahead. You can use regular lasagna noodles and they will cook perfect in the crock pot. You'll want to start off with a layer of sauce in the bottom and then a layer of lasagna noodles and then a layer of cheese. Then you want to put a layer of Bechamel Sauce and then start over being sure to finish with a layer of cheese on the very top. You'll want at least a six to eight quart slow cooker or crock pot to cook your crock pot lasagna in. It will take about six hours on high to cook and no you don't stir it.
You'll have to break the lasagna noodles to get that layer in. Your lasagna noodles will cook perfectly while the lasagna is cooking. Resist the urge to open the crock pot and peek while the crock pot lasagna is cooking.
You can serve a green garden salad and garlic bread with the lasagna and have one of the best meals you'll ever eat. This is one of the best recipes for crock pot lasagna that I've ever tried. It works perfect each and every time and the Bechamel Sauce gives the Crock Pot Lasagna something extra and just kicks the taste up a notch or two.
