Beginners Guide to Easy Fondant

If you've got a sweet tooth, marshmallow fondant is just the topping for your cake! It's easy to work with and make designs with. For recipes on how to make buttercream icing, or chocolate cake(how to assemble a cake included) see these:

Cook Time

Ready in: 20 min
Yields: 3 pounds. (enough to cover 9 inch 2 tiered cake).


  • 16 oz mini marshmallows, (400g bag and 250mL)
  • 25mL water
  • 25mL light corn syrup
  • 2mL salt
  • 2000mL powdered sugar, (sift and then measure)
  • 50-125mL shortening


  1. Place marshmallows and water in a large microwave safe bowl. Microwave for 30 seconds at a time until marshmallows soften and puff up. Stir with a wooden spoon greased with shortening every 30 seconds until it is well combined
  2. Stir in corn syrup and salt with a greased rubber spatula
  3. Sift the powdered sugar over the melted marshmallows, 250mL at a time(otherwise it will be unusable). Fold until all is incorporated and it is no longer sticky. Place on a well greased countertop.
  4. Grease your hands with shortening and take 25mL of shortening to knead into the mixture. Each time the fondant feels dry, add another 25mL of shortening and repeat. The mixture will become stiff, add enough powdered sugar until the mixture becomes smooth and satiny. This will take about 5-7 minutes. (add desired food colouring as well)
  5. Form into a ball and coat with a thin layer of shortening. Wrap tightly in plastic wrap and store in an air tight container.
  6. Let rest overnight before using.
