Sandra’s hospitality begins by preparing a Mexican inspired Cuisine, Huevos Rancheros. Maneuvering throughout the kitchen Sandra prepares the popular breakfast dish consisting of fried eggs served upon lightly fried corn tortillas topped with a tomato-chili sauce and beans.
- 1 large tomato, Diced
- 1/2 Red onion, diced
- Tsp. Kosher Salt, Sprinkle
- Tsp. Freshly Ground Pepper, Sprinkle
- 2 tablespoons plus 2 teaspoons extra-virgin olive oil, Add To Pan Before Cooking Eggs.
- 1 15.5-ounce can pinto beans or black beans, Drained And Rinsed
- 4 large eggs, Mix
- 4 6-inch Corn Tortillas,, Warm
- 1/2 cup Mozzarella cheese, Shredded
Peruvian Huevo Rancheros
Step One: Chop Onions And Tomato
Step 2: Sauté Onions And Tomato In A Skillet Using 2 Teaspoons Of Olive Oil
Step 3: Meanwhile, Heat The Remaining 2 Tablespoons Of Oil In Another Skillet. Prepare Eggs Sunny-Side Up; Season With Salt & Pepper
Step 4: Allow Beans To Simmer In A saucepan, While Adding 3 Tortillas In A Skillet To Warm.
Step 5: Prepare Your Tortilla With Eggs According To Your Liking. Add beans To The Side Sprinkled With Cheese
