Asiago Cheddar Chicken & Apple Grilled Panini Recipe

I am not a good cook. I'll be the first to admit that. However, I can cook a mouth-watering grilled panini sandwich. My Asiago Cheddar Chicken & Apple Grilled Panini. Everyone who has ever tried it absolutely loves it and I wanted to share the recipe with all of you. It is so delicious, I'm having a serious craving for one just thinking about it. The cheese has a wonderful texture and the flavors of the tart apple and chicken come together to truly give you a lunchtime treat. My recipe is for one, but you'll probably want to eat two at a time!

Serving Size: 1 Absolutely Amazing Mouth Watering Grilled Panini Sandwich


1 teaspoon of olive oil (or substitute butter or butter flavored cooking spray)

4 slices of cooked chicken breast

1 green apple, peeled and thinly sliced

1 slice of asiago cheese

1 slice of mild cheddar cheese

2 slices of sourdough bread


Heat up your panini grill. Most grills have one setting, if you have more than one, choose the middle setting. I use George Foreman's “grilling machine” and it works great.

Put one slice of cheese on top of the first piece of bread. Layer as many sliced apples as you desire and place then place the cooked and sliced chicken on top. Place the last piece of cheese and top off the sandwich with your other piece of sourdough bread. Now gently brush your olive oil (or butter) on both sides of the sandwich. Place on the grill and cook until your sandwich is golden and your cheese is nice and gooey.
