Quick and Easy Meal Recipe: Ranch Stew (Ideal for Slow Cooker and Crock Pot)
Quick and Easy Stew Recipe
I love making this recipe in the winter. If I'm by myself I might make a big batch and eat it for several days. Sometimes I make it for my family and it's really easy to increase the ingredients for a bigger batch and still get the same great taste. Although It's called a stew, it's not really a stew in the most obvious sense. I call it that because it's all cooked in the same pan or crock pot (or slow cooker) like a stew but this is ready reasonably quickly and only needs to be cooked on the stove and not in the oven. Have a look at this easy simple recipe and then try it for yourself. You won't be disappointed!
Ranch Stew Rating
Easy Meal Recipe
All you're going to need to prepare this recipe is a tin opener, a heavy based pan with a lid and a sharp knife. Nothing else. It's really that simple. Now, let's take a look at the preparation and cook time and see what ingredients we'll be needing. I guarantee you'll already have a lot of them so there's no need to go out to the supermarket and spend a fortune on the one dish.
Cook Time
Ingredients
- 2 Medium Onions, Roughly chopped
- 2 Cloves Garlic, Crushed
- 4 good quality Sausages
- 4 rashers Smoked Bacon, Cut into pieces
- 10cm Piece Chorizo, Cut into 1cm cubes
- 2 Tins Cream of Tomato Soup
- 2 Tsp Cajun Seasoning
- 1 440g tin Butter Beans, Drained and Rinsed
- 1 tsp Salt and Pepper
- 1 tbsp Oil
So there's your ingredients. The only prep is in chopping the onions, garlic, bacon and chorizo and getting those tins open. I say it takes 10 minutes but really it should take less than 5.
Instructions
- Heat the oil in the pan over a medium heat and add in the chopped onions, bacon, chorizo and sausages (whole). Cook for about 5 minutes, stirring frequently.
- Add in the crushed garlic and cook for a further 2 minutes. If the sausages are firm and have started to cook, take them out of the pan and cut into slices. Return the slices of sausage into the pan and continue to cook for a further 2 minutes.
- Add in the tomato soup and stir continuously for 5 minutes over a medium heat.
- Stir in the cajun seasoning, salt and pepper. Turn heat down low and place the lid on the pan. Cook gently for about 40 minutes.
- Check flavour and add in more cajun seasoning if desired (I like to add plenty into mine). Serve in a bowl with rustic white bread,
Is this also a Slow Cooker Recipe?
Yes! The great thing about this easy meal recipe is that there are many ways in which it can be cooked. If you have a slow cooker then this is an excellent slow cooker meal. Just throw all the ingredients into the pot and leave to cook on a low heat for a few hours until you're ready to eat it. This is a great one pot recipe whichever way you cook it.
