Have you ever purchased a moist, tasty, delicious rotisserie chicken from the supermarket? Rotisseries cooking takes hours and special equipment to bake in that wonderful taste and crunch, but you can recreate the same taste sensation in your slow cooker (Crock Pot) with chicken legs and thighs. It's the answer to a busy person's prayers! Just put the chicken into the slow cooker in the morning, cook it for 8 to 9 hours, and dinner is almost entirely cooked for you. Here's how to create the same rotisserie chicken taste in your Crock Pot or slow cooker with this easy chicken recipe.
Slow Cooker Rotisserie Chicken Ingredients
To make chicken in the slow cooker that tastes like a rotisseries chicken, you will need:
- Chicken legs and thighs with bones in - you can remove the skin if you prefer
- Half a can of chicken broth
- One chicken bouillan cube
- Lemon pepper seasoning
- Slow cooker
That's it! It's that simple.
Easy Slow Cooker Chicken Recipe Instructions
Prepare the chicken for the slow cooker recipe in the morning. Rinse the chicken thoroughly under cold running water. Pour approximately half a can of chicken broth in the bottom of the slow cooker. Add one chicken bouillan cube to the broth. (You don't need to dissolve it; it will dissolve in the heat of the slow cooker during the cooking process.) Place the chicken on the bottom of the slow cooker in a single layer. Sprinkle lemon pepper seasoning over the chicken so that the chicken is covered with it. You can't use too much - keep sprinkling. Once the chicken is seasoned, place the cover and locking band (if you slow cooker has one) on top and set it to LOW heat. Cook for 8 to 9 hours on low. Do not open the lid during cooking.
Tips and Serving Suggestions
To get that delicious rotisseries baked chicken flavor out of slow cooker or Crock Pot chicken, make sure that the broth does NOT cover the chicken. The thin layer of broth liquid in the bottom of the slow cooker or Crock Pot keeps it from sticking to the unit. During cooking, the heat in the slow cooker will release juices from the chicken, which will increase the liquid in the pot. The lemon pepper seasoning and release of these liquids is what creates the texture and taste of slow cooker chicken.
When the chicken is done, shut off the unit and serve. Side dish suggestions include:
- Salads - green salad, garden iceberg lettuce salad, coleslaw, potato salad, macaroni salad (makes it like a picnic meal)
- Potatoes - mashed sweet potatoes, mashed potatoes
- Corn bread
- Corn on the cob, canned corn, frozen corn
