Vegan Recipes

Whether you follow a vegan diet, cannot have eggs,are lactose intolerant or have family or friends who are. It can be very difficult at times to find recipes to suit your needs. Having some vegan friends I needed some some vegan recipes. I didn't want to bring food to parties that not everyone could try.

Note: You will notice that these recipes call for unbleached flour and unbleached sugar. This is due to some bleaching processes. As it may or may not be vegan friendly. Plus it's healthier with non-bleached ingredients!

Here are the recipes.....

The Vegan White Cake Recipe

What You Need

  • 1 cup of cold water
  • 1 1/2 cups of unbleached flour
  • 1 cup of unbleached sugar
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1 teaspoon of vanilla extract (I usually add a little more)
  • 3 tablespoons of cocoa
  • 1/3 of a cup of cooking oil
  • 1 tablespoon of distilled vinegar
  • 9X9 inch pan

What To Do

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Mix all of the dry ingredients (sugar, flour, baking soda, salt and cocoa) in the pan.
  3. Create three holes in the dry ingredients.
  4. Pour the oil, vanilla and vinegar each in a separate hole.
  5. Pour the cold water evenly over top of everything.
  6. Mix well but do not beat.
  7. Bake for 30 minutes.Or until a toothpick stuck into the middle of the cake comes out clean.
  8. Allow to cool, ice, and enjoy!

Vegan Carrot Cake Recipe

What You Need

  • 2 cups of shredded carrots
  • 2 1/3 cups of unbleached flour (also good with whole wheat flour)
  • 1 teaspoon of vanilla extract (or more if you wish)
  • 1 teaspoon of baking powder
  • 1 1/2 teaspoons of baking soda
  • 1/2 teaspoon of salt
  • 3/4 cup of cooking oil (add more oil if you wish to make your cake more moist)
  • 1 1/2 cups of unbleached sugar
  • 3/4 of a cup of warm, not hot, water
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of nutmeg
  • 1 cup of chopped walnuts (optional)
  • 6 tablespoons of flaxseed meal
  • 1/4 cup of applesauce
  • 2 8X8 baking pans

What To Do

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a bowl mix together the dry ingredients (flour, sugar, salt, cinnamon, nutmeg, baking powder, baking soda).
  3. Mix the flaxseed meal with the water and then add to the dry mixture.
  4. Beat in the cooking oil and apple sauce.
  5. Add vanilla.
  6. Add grated carrots and mix well.
  7. Fold in the chopped walnuts if you are using them.
  8. Pour equal amounts into your greased pans.
  9. Bake for 18-20 minutes. Or until a toothpick inserted into the middle of cake comes out clean..
  10. Allow to cool, ice, and enjoy your carrot cake!

Vanilla Vegan Cake Recipe

What You Need

  • 1 tablespoon of distilled vinegar
  • 1 1/2 cups of unbleached flour
  • 1 teaspoon of baking soda
  • 1 tablespoon of vanilla extract (or more if you like)
  • 1/2 teaspoon of salt
  • 1 cup of soy milk or rice milk
  • 1/2 cup of vegetable oil (or 1/4 cup of oil and 1/4 cup of apple sauce)
  • 1 cup of unbleached sugar
  • 1/4 teaspoon of cinnamon (optional to add a little spice to your cake)
  • 8X8 inch pan

What to Do

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Combine dry ingredients into a bowl (flour, sugar, salt, and baking soda).
  3. Add vanilla, milk, and oil to the dry ingredients and mix well.
  4. Add vinegar to the mix and carefully stir. Do not beat.
  5. Pour mixture into a greased pan.
  6. Bake for 30 minutes or until a toothpick inserted in the middle comes out clean.
  7. Let cool, ice and enjoy!

Vegan Cream Cheese Icing Recipe

What You Need

  • 1 cup of room temperature vegan cream cheese
  • 1 teaspoon of vanilla extract
  • 1/4 cup of unbleached, soy or rice flour
  • 1/2 cup of margarine
  • 2 cups of icing sugar

What To Do

  1. Beat the vegan cream cheese, margarine and vanilla in a bowl until completely mixed.
  2. Add flour to the mixture and beat well.
  3. Beat in the icing sugar until mixture is light and fluffy.
  4. Allow to cool in the fridge for at least half an hour.
  5. Spread on your cake and enjoy.

Vegan White Icing Recipe

What You Need

  • 1/4 of a cup of Earth's Balance butter or any other vegan butter
  • 2 cups of icing sugar
  • 1/4 cup of vanilla soy creamer

What To Do

  1. Cream together the butter and the vanilla soy creamer.
  2. Mix until smooth (easiest with an electric mixer).
  3. Slowly mix in the icing sugar.
  4. If too runny at more icing sugar, if too thick add more vanilla creamer.
  5. Put in the refrigerator for at least half an hour.
  6. Spread on your cake and enjoy!

Vegan Chocolate Icing Recipe

What You Need

  • 2 tablespoons of vegan butter such as Earth's Balance
  • 1/4 cup of cocoa
  • 1 1/2 cups of powdered sugar
  • 2 tablespoons and 2 teaspoons of milk (soy, rice, almond, ect)
  • 1/2 teaspoon of vanilla extract

What To Do

  1. In a microwavable bowl melt the butter.
  2. Mix cocoa into melted butter and stir until completely combined.
  3. Add milk and vanilla to mixture and continue stirring.
  4. Slowly add icing sugar until completely mixed.
  5. If consistency is too runny add more icing sugar. If too thick add more milk.
  6. Allow to cool in refrigerator for at least 1/2 and hour.
  7. Spread on cake and enjoy!

      I have never seen a white cake recipe with cocoa powder in it. Is it actually white? Vegan Cupcakes Take Over the World is my go to for good vegan cake recipes.
