How to cook this great Filipino dish

Kalderata Manok is a Spanish influenced dish that your find being cooked throughout the Philippines and is known as Chicken Calderata.

For my English pallet its a wonderful curry and this is Naomi's version.


600 gm Chicken fillets cubed

Pinch of Salt

Pinch of mono sodium glutamate

1 Large Onion chopped

cooking oil for frying

1 can of peeled tomatoes

250 ml coconut milk

3 cloves of Garlic

1 tea spoon Hot Chilli and garlic sauce

250 gm cubed potato

125 gm cubed carrot

200 gm Pineapple


Heat cooking oil in a wok and then add the garlic and Onion until brown, then add the potato, carrots, salt,Mono sodium glutamate and chicken, add a little water, stir and simmer for 10 min.

Then add the tin of chopped tomatoes and coconut milk, simmer for an additional 20 min then add the pineapple slices and cook for a final 5 min.

Serve with rice and enjoy.

Naomi will be preparing this dish for guest staying at La Forge and La Veille maison, the Brittany holiday cottages with a heated swimming pool based in the Morbihan region of southern Brittany, France.

      Its my favorite dish and yes Naomi has performed at cultural shows in the Philippines and in the United Kingdom, the performance in the video was at my parents wedding anniversary as a special treat for them and there guest.

      The caldereta looks good! One of my favorite as well. :) And I enjoyed watching Naomi's fan dance. I wonder if she used to be a Filipino folk dancer? She's really good. Watching her traveled me back in time on our Filipino Week school programs when we do Filipino games and folk dances.) I love watching the folk dances. ^-^' And school competitions are much thrilling to watch :) Rated, useful and awesome!
