How to cook chicken dum Biryani
This dish serves as an excellent accompaniments to all the meals...Talking about biryani.. so it brings us the joy and delite of food aroma., Hydrabadi dum biryani is very popular dish all over the india.it was first cooked in the rasoi of our royal nizams.
Once the biryani will be cooked on dum and as you open the lid,you can smell the real aroma and fragrance of indain tradition to melt in the mouth tenderness.
Dum briryani is made by marinating the chicken and then mixing it with half cooked rice.
- 1 KG chicken, washed and drained properly
- 2 Large onions, finely sliced
- 2 tbsps coriander leaves, chopped
- 1 tsp safaron
- 1/2 cup milk, luke warm
- salt, as per taste
- 2 tbsps ghee
- 5 tbsps oil
- INGREDIENTS FOR MARINATION
- use yogurt/curd - 3/4 cup
- Ginger garlic paste-1&1/2 tbsps
- Green chillis-8-10 (make small slit in them)
- 1/4 tsp turmeric powder
- kashmiri Red chilli powder-1 tbsp
- coriander powder -3/4 tbsp
- pudina leaves-3/4 cup
- coriander leaves-1/2 cup chopped
- 1 lemon juice
- salt-1 3/4th tsps
2. BIRYANI MASALA INGREDIENT
- cinnamon sticks-1
- shah zeera-3/4
3.INGREDIENTS FOR RICE
- Basmati rice-4 cup
- cloves- 5
- cinnamon stick-1
- bay leaves-3
- oil-1 tbsp
- salt-1&1/2 tbsps
- water as per requirement
PROCESS FOR MARINATION OF CHICKEN
Take the washed chicken add curd in them and them add all the above mentioned marination ingredients in them and properly mix them with hands.
Now leave the chicken for about 4 hour and if in hurry leave it for 2 hours..
PROCESS FOR COOKING RICE
Take a pan and put some oil in it then add all the above mentioned ingredients of cooking rice in it. And stir it properly
Now add lots of water in it.And make it boil.As the water begins to boil add the washes basmati rice in water.Cook untill the rice is half cooked.
Now strain the water and spread the rice on a large plate.Allow to cool.
PROCESS FOR COOKING MARINATED CHICKEN
After the marination of chicken for 4 hours put it on a sim gas and cook it for approx 25-30 minutes till it is cooked.
PROCESS FOR ONION AND MILK:
FOR CARAMELIZED ONION: Put oil on a pan and allow it to heat up now add sliced onion it it and fry it till it is caramelized.
LUKE WARM MILK: Warm the milk and add saffron in it mix will and leave it aside..!!
PROCESS TO DUM THE BIRYANI:
Take a wide deep vessel put the some amount of cooked chicken at the bottom as a first layer now put another layer of half cooked rice then spread ghee,saffron milk,mint,caramelized onions.(DNT STIR).
Now again repeat the above step by putting another layer of chicken and then rice and then ghee, milk,so on..
FOR PLACING LID ON THE VESSEL:
Take the lid and apply the wheat dough all over its edges.
Now place this lid over the vessel properly by covering all its edges making sure no space is left over for the passage of air.
Now heat the iron tawa on gas and sim the gas now put the vessel on it.Leave it for 20-25min to cook.
Turn off the gas stove and after 5 min remove the lid.
And serve it hot with salad and raita of ur choice.

- Use thick and pure yogurt/curd for marination
- Use best quality aged basmati rice
- Dont stir during dum ( cooking process)
- marinate atleast for 2 hours (minimum)
