Baigani or Brinjal Fritters which is also known as Eggplant Fitters is a famous evening bengali snack, however, famous all over India as well. It is very delicious, crispy and very easy to make in less time. I generally savor it at tea time and sometimes with dinner as well. The same recipe, the fritters are made with potatoes and raw banana also. Here anyway am introducing the recipe with Brinjal.

- 250 grams Besan (gram flour)
- 2 Brinjal cut into slices
- Few black cummin seeds
- Salt to Taste
- Mustard Oil for deep frying.
Method of cooking Baigani - Brinjal Fritters

Cut Brinjal into thin slices
# Step 2 of making Baigani or Brinjal Fritters
Make a thick batter with the besan and add the black cumin seeds and salt to it.

Heat the mustard oil in a pan or a wok.

Take 1 Tbs of heated mustard oil from the pan and add the same to the batter (This will make the fry crispier).

Now dip the Brinjal one by one into the batter and deep fry them.
