How to make Buffalo Chicken Bites
Since we make a lot of chicken at home we are always looking for ways to make something different and delicious. My husband is famous for his chicken wings with the Honey BBQ sauce (his famous secret recipes that the kids know and I don't) Although this is totally delicious I really enjoy the buffalo flavor I had a friend many years ago teach me his version of buffalo sauce but over the years I never could remember the only thing I recalled was to use real butter. So, I spend many years trying other peoples recipes and buying store bought sauces. They are all really good but I was looking for my own taste I suppose. Well after much time I believe I have found my perfect mix for a tasty buffalo sauce. The recipe I will include will be for a medium heat but if you like it more mild use less hot sauce or if you like the hot just add more. I usually make the sauce in the last 5 minutes of frying the chicken but you could make sooner if you prefer. I am writing this as Buffalo Chicken Bites but you can make more sauce and make it for wings, or chicken fingers. The other night I just took out two chicken breast made the sauce poured the sauce over the chicken and baked for my oldest(the non meat eater that always has me cooking 20 different meals a day) and she said it was delicious. She usually only likes breaded and fried chicken so I was pleased that this worked out for the best. So keep reading and I will give you all the ingredients and the way I cook this meal. Serves great as an appetizer or a meal with fries or mac and cheese.
Buffalo Chicken Bites
- 2 pounds Chicken Breast, boneless skinless
- 2 cups Flour
- 1 cup Seasoned Bread Crumbs
- enough to fry Oil
- 1/2 teaspoon Season Salt
- 1/2 teaspoon adobo
- 1/4 packet sazon
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 cup butter
- 1/2 cup hot sauce, Louisiana Hot Sauce
- 1 tablespoon ketchup
- 1 tablespoon Ranch Salad Dressing
- 1 tablespoon sweetbaby rays bbq sauce, original
Step 1: Get out your utensils.You will need a cutting board and knife, a bowl for your flour and breadcrumbs, a pan for frying a sauce pan for the sauce, and some where to put the chicken when done frying.
Step 2:Wash your chicken and cut into bite size pieces. I usually cut them to about 1 inch cubes may a little smaller.
Step 3: In a bowl mix flour and bread crumbs. Add Garlic powder, black pepper, adobo, sazon, and season salt. Mix well. If you like your breading to be thicker take two eggs and beat well and dip chicken in egg batter before putting in your flour bread crumb mix. I cook this sometimes with the egg and sometimes with out really just depends on how much I am making and what I have in the house. The flavor does not change just the appearance of the chicken.
Step 4: Once all Chicken is breaded you will be ready to fry, so start heating up your oil.
Step 1: Now that you have already prepared the chicken you can start heating you oil and start frying the chicken.
Step 2: When all chicken is done frying take a few paper towels or napkins put them in the bottom of the bowl add all the chicken and just let a bit of the oil drain onto the paper towels.
Step 3: Remove the paper towels and toss them.
Step 4: Coat Chicken Bites in Buffalo Sauce

Make your sauce
Step 1:In a sauce pan on medium low add butter
Step 2: Once butter starts melting add Louisiana hot sauce(use a little more or less to your taste on heat) stir well.
Step 3:Add ketchup and sweet baby rays original barbque sauce. mix well.
Step 4:Let it come to a very slow boil.
Step 5 Stir again and take off heat.
Opitional Step :Add Ranch Dressing, I like to add it right to the sauce and mix well but my kids prefer to dip in the ranch after. Either way tastes great. Now that your chicken has had some time to drain the oil remove paper towels and add sauce over chicken. Mix well to make sure all chicken is coated.
Serve hot with Ranch or Blue Cheese Dipping sauce
