How to make Chicken Stew with White Rice

Chicken with Sauce and White Rice
I make a lot of chicken dinners because that is the only way to get my oldest to eat something with a little nutrition. My mother in law actually taught me how to make this but I have changed it up a bit to meet my taste buds expectations.
I will add an ingredient list and I will show you how I make this tasty meal.
Last night when I served this my hubby told me this was the best meal I have ever made him. Well that must be saying a lot as he usually does not say much unless he is eating his Mom's cooking or we are at a restaurant. For my cooking I guess is so routine that I actually forgot how delicious this meal is and how easy it is to get it on the table.
Boneless Skinless Chicken Thighs- cut into small chunks
Olives with pimento
Potatoes- peeled and cut into small chunks
You will need to have a two pots with tight fitting lids or one for the rice and a crock pot if you prefer to cook in a crock pot
I like to use a long grain white rice but you can use which ever your prefer.
In a pot add 2 cups of white rice
add 1 teaspoon of vegetable oil
add 1 teaspoon of salt
Add 1 cup of Chicken Broth
Add 2 cups of water
On a medium high temp start heating rice
When it comes to a boil start watching it. When most of the water is evaporated add tight fitting lid and reduce temp to a medium low.
Cook for about 20 minutes. With a large spoon rotate rice from bottom of pot to top and remove from heat. I usually leave it on the stove on a different burner while I prepare and cook the rest of my meal. If I am not serving right away I will remove from rice pot and put in a plastic bowl with a tight fitting lid. This is in case you have to reheat to serve you can just pop it in the microwave for a quick reheat
Chicken with Sauce
Cut up your Chicken into small chunks, Cut up onion, green pepper, carrots and potatoes. I peel the potatoes and cut into small chunks about the same size as the chicken
In the pot add Chicken and about 3 tablespoons of oil. Start heating the oil and add the chicken. When this starts cooking add a few tablespoons of chicken broth. Let this start cooking for about 5 minutes and stir around.
Now add 3-4 tablespoons of Sofrito if you do not make your own I like to use the Goya brand that you buy in your local grocery store in the freezer section.
Now add Onions and green peppers and add olives and potatoes. Stir well.
Add about 1/2 cup of chicken broth and let cook about 5 more minutes
Add 1-2 teaspoons of cornstarch so that your sauce won't be watery. You want your sauce to be a little thick
Now add your dry seasonings, I use about a teaspoon of garlic powder, a teaspoon or onion powder and a teaspoon of adobo.
Now Mix well
Add half a packet of Sazon, I use the one with Achiote I also prefer the Goya brand or this seasoning
Add 2 tablespoons of Salsa
Now that you have added all of your ingredients add more Chicken broth until everything is barely covered as you want it to cook but you don't want to make soup out of it.
When everything is in your pot or your crock pot heat until a slow boil. Once it starts boiling reduce temp to a medium low and cover. Let this cook for about 25 minutes stirring regularly it in a regular pot but if in crock pot can leave on low all day or high for about 2-3 hours
After about 25 minutes I make sure that my sauce is the correct consistency and if too thick I add more chicken broth or a little water. If just right I reduce to the lowest temp and leave on the stove until I am ready to serve.
I serve on top of white rice with sauce.
This meal is great served with a nice garden salad and fresh cuban bread with butter. You can of course serve with what ever is your preference.
This meal can also be served nicely over yellow rice or egg noodles.
