How to make Pesto

Pesto is known to go well with pasta and make a good sauce. Making pesto the traditional method with a pestle and mortar creates a nice aroma of the crushed basil leaves. However this is very time consuming and here is a fast and easy way to make pesto.

You will need the following ingredients:

  • 50g of basil with its stalks
  • 50g of pine nuts
  • 65 g of parmesan cheese, finely grated
  • 2 cloves of garlic, chopped
  • 125ml of olive oil
  • Salt and pepper

Preparation

Rip the basil into pieces and put it into the food processor along with the pine nuts, parmesan cheese and garlic.

Put the blend on lightly setting on the food processor. Keep blending until the nuts and cheese are broken down to smaller pieces. Scrap the nuts nd cheese from the sides to make sure it all gets blended.

Finally add olive oil and a pinch of salt to the paste and blend until it is smooth and thick.  Keep it in a lidded jar with olive oil. Don’t use after about 5 days.
