How to make a Grilled Southwest Style Chicken Salad

Pretty much everyone likes to eat a salad sometimes. I like to make a lot of salads with some kind of grilled chicken or steak a lot. This way I can force my family to get some nutrients with out making a big meal. I especially like to make this at lunch time, When I think of salad I can think of many that will catch my attention most especially when it is hot outside. My husband will look at me like I have 2 heads when I say I am making salad for lunch he will usually respond with I am not a rabbit. I don't pay attention I just keep what I am doing and make the salad. Once he sees me taking out my George Forman grill he usually stops complaining and waits patiently to eat. I am pretty simple when it comes to salad ingredients so this will be a simple recipe to follow.

George Forman Grill


  • Iceberg Lettuce, shredded
  • Tomatoes, chopped or sliced
  • cucumber, sliced thin
  • Carrot, shredded
  • boneless skinless grilled Chicken Breast, chopped or chunked
  • Taco Seasoning, 1/2 packet
  • Taco Sauce, 1 cup
  • green olives with pimento, 12-15
  • Onion, thinly sliced
  • Green Pepper, thinly sliced
  • Red Pepper, thinly sliced
  • Southwest style Crispy strips, to taste

Preparing Chicken for Grilling

Start with a large bowl, a cutting board and a decent knife. Take your chicken and wash it good. Once chicken is clean cut into strips place in bowl. Add a little water and taco seasoning. With Clean or gloved hands rub the mix all into the chicken. When you see that all the chicken is coating with seasoning get the taco sauce and pour over chicken. Rub sauce all over chicken. When this is complete place on your preheated George Forman grill or what ever grill you have. Cook until chicken is no longer pink on the inside. Once Chicken is done cooking take off the grill and place on a plate and let cool. When chicken is cooled to the temperature you would like in your salad. I prefer to let it cool and stick in the refrigerator for a while so its cool but some people prefer the chicken to be warm so please adjust to your liking. Make sure that Chicken is cut into strips or chunks to your own preference.

Now that your Chicken is prepared

Now is time to prepare your salad. You can chop it up any way you like. I like to shred my lettuce and chop my tomatoes. I like to slice really thin the onions and peppers and I like to shred my carrots. I leave the olives whole unless they are the giant ones then I will slice in half or fourths if needed. When I am ready to serve my salad I add the southwest style chipolte flavor salad strips and I like to use Ranch Salad dressing but you can of course use your favorite flavor. If I don't have any of the salad crispy strips I will crunch up some tortilla chips or doritoes if we have any.

Some other styles

There are many other ways to make a Grilled Chicken Salad.

You can use just plain Grilled Chicken and use your salad dressing for flavoring

You can marinate your chicken in italian salad dressing. This is really good for baking also.

You can marinate your chicken in buffalo sauce.

For a real quick buffalo sauce in a small sauce pan add butter about 2 tablespoons, about the same amount of hot sauce I prefer to use Louisiana hot sauce, add a teaspoon of ketchup and a 1 teaspoon and a half of sweet baby rays bbq sauce( original) let melt together and stir. You can always add more hot sauce if not hot enough for you and then I put just a tiny squirt of ranch dressing.

You can use a marinate like Dales which is great but very salty.

You can make with lemon herb chicken which gives the salad an amazing taste.

You can make it with a honey bbq sauce.

There are so many variations that I know of but I am sure you all know of some others you can share with me in the comments.


You can make all of the Variations above with Grilled Chicken but some other ways to a great salad can include a nice crispy fried chicken and also steak is nice in a salad as well. Take a nice thin palomino steak and slice thinly and season in any recipe for some thing a little different. Please feel free to add your favorites in the comments if you like.
