How to make a Strawberry and White Chocolate Cheesecake
No Bake Cheesecake!
I created this recipe and took it to our friends for Easter lunch - hence the chocolate eggs on top. It was a real hit!
This cheesecake can also be made wheat and gluten free by using a pre-bought wheat and gluten free crumble crust by patsy pie for suppliers contact: www.patsypie.com
9oz oatmeal biscuits crushed for base mixed with 3 oz melted butter and 3 tablespoons honey
OR 1 x patsy pie crumble crust for wgf option
250g cream cheese
1 cup white chocolate wafers plus wafers for decoration
i cup whipping cream
11/2 cup strawberries sliced
2 teaspoons sugar
2 tablespoons water
1 tsp gelatin
Press down the oatmeal cookies, melted butter and honey into a pie dish or grease and line an 8" spring form cake pan
Place cut strawberries sugar and water into a pan and bring to boil, stir. Remove 1 cup of strawberries, and strain excess liquid. Add 1xtsp gelatin to remaining fruit and simmer for 10 mins.
Place bowl of white chocolate wafers on top of simmering pan to let wafers melt, stir until meleted and non melted wafers combine. Be careful NOT to get water into the chocolate.
In a food processor, whip cream until stiff and combine in cream cheese. Add melted chocolate and 1 cup strawberries removed from heat earlier and combine together.
Spoon the topping onto the biscuit base or patsy pie crust and place in refrigorator to set.
After 30 mins add the remaining strawberry and geltain mixture on spread on the top. Put back in refrigerator to cool for 3-4 hours.
Decorate with white chocolate wafers.
