Moms Tasty Meatloaf

Meatloaf always reminds me of my mom. This was one of her best recipes. Whenever I can I try to make a meatloaf for my Dad as my mom passed away about 12 years ago. My mother had a few recipes that were to die for and this has always been one of our favorites. My whole family looks forward to a tasty meatloaf. I like to serve with egg noodles or white rice and . I like to have a nice garden salad some fresh cuban or french bread with butter and some veggies. And if by chance there is any leftovers its nice to make a nice meatloaf sandwich to bring to work for lunch. I hope you enjoy this meal



Cook Time

Prep time: 15 min
Cook time: 1 hour 30 min
Ready in: 1 hour 45 min
Yields: Serves 6 people


  • 2 pounds Lean Ground Beef
  • 2 eggs
  • 1-1/2 cups Italian Style Bread Crumbs
  • 1 packet instant oatmeat
  • 2/3 packet onion soup mix
  • 1/4 onion, chopped
  • 1/4 green pepper, chopped
  • 1 teaspoon garlic powder
  • 1 tablespoon Sofrito
  • 1 small can tomato sauce
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon season salt

Preparation and cooking instructions

  1. First you will need a 2 loaf pans, a cutting board and knife or chopper and a large bowl
  2. Chop onion
  3. Add meat and all dry ingredients in large bowl, mix well
  4. Add eggs and Sofrito and mix well
  5. Preheat oven to 325
  6. Shape Meat mixture into 2 loafs
  7. on top of loafs add a few teaspoons of tomato sauce ( I like to make a nice squiggly line on top) and 1 cup of water to the bottom of the loaf pan (if using a big pan and not a loaf pan use water accordingly to your pan)
  8. Put meatloafs in oven for about 1-1/2 half hours or until no longer pink on the inside and the outside is slightly crisp
