How to make eggplant subji

This recipe based on Gujarat. I personally love this recipe.

What included in egg plant

I love to cook this recipe because Eggplant is a very good source of dietary fiber, vitamin B1, and copper. It is a good source of manganese, vitamin B6, niacin, potassium, folate, and vitamin K. Eggplant also contains phytonutrients such as nasunin and chlorogenic acid

  • 1 big Eggplant
  • 2 small Tomatoes, Finey chopped
  • 1 medium Onion, Finey chopped
  • 1tbs Oil
  • 1tsp Ghee
  • 1/4 tsp Cumin seeds
  • 1/2 cup Green garlic, Finey chopped
  • Dhaniya, For garnishing
  • 1/4 tsp Turmaric powder
  • 1/2 tsp Red chilli powder
  • 1/4 tsp Garam masala
  • Salt, For taste
  • 1 tsp Lemon juice


  1. Wash big eggplant and apply little oil on eggplant. - take big niddle and press many holes in eggplant - turn on stove and put your oil greased eggplant - turn eggplant side by side and cook it until it becomes dark skin. - peel off the skin and smash it with fork keep it aside
  2. - take a nonsick pan and take it on stove - add oil,ghee,cumin seeds when cumin seeds starts crackling add onions- when oninon become light pink- add tomatoes and eggplant - add all th spices red chilli powder, turmeric powder and garam masala ( tip:- when you add spices add one to another on top and add some oil on it,it becomes nice in colour)- add some sault of your choise- add green garlic and mix it well - add half cup of water in mixture add close the lid cook it until 3 minutes - add lemon juice at the end
  3. - take it in serving bowl and garnish it with some coriander leaves - serve it with paratha or roti of your choice

How to cook eggplant on stove

For eggplant curry the basic need is eggplant make eggplant pulp:-

- wash eggplant nicely

-apply oil for greased

- place it on stove

First of all you have to take long niddel and make holes to eggplant or you can use knife for little cuts in small small spaces but niddel is best option for it.

Gently turn all the side of eggplant and allow it cook nice and deep. Please be careful your hand not geeting hurt by heat. The flame of stove is on medium. Use end part (tail) of eggplant to flip the sides.

Make sure that you have to gentle press by using fork between cook because its water become burning and it can get nice smokey flavour in it.
