How to make fantastic meatballs

The ingredients for my favorite meatball recipe

  • 1.5 pounds of ground beef
  • .5 pound of ground pork
  • 2 cloves of minced garlic
  • 2 eggs
  • 1 tablespoon of parsley
  • Crumbled Italian bread, toasted
  • A few pinches of salt and ground pepper
  • 1.5 cups of water, room temperature to lukewarm
  • 1 cup of virgin olive oil

Meatball recipe directions

Put your meat in a big bowl. Add the eggs, the garlic, parsley and salt & pepper. Mix your bread crumbs evenly throughout the meat. Add water about a quarter of a cup at a time. Your mix should be very moist but it should still hold its shape like clay. Heat the olive oil on a cast iron skillet. Form some balls with the meat and place them a few at a time on the skillet. Be careful with splatter because the water from the meatballs will mix with the oil. When the meatballs are brown remove them from the skillet and put them on a dry paper towel so they can drain some of the excess oil. You can now stick the meatballs in a sauce (preferably marinara) and cook them for another 15 minutes before serving.
