How to Make Home Made Potato Salad

Potato Salad

There are many and varied potato salad recipes, some are nice others not as nice, but you can always adjust any of the ingredients in this recipe to suit your own personal taste. Some of the ingredients used in this recipe may be known to you by some other name or may not be available at this time of the year, depending on where you live around the world. The photographs may help if this is the case.

I have been making this recipe for many years and it is my family and friend's absolute favorite. It is also very easy and economical to make and has only 6 main ingredients, 8 if you include the salt and pepper.

Ingredients

Ingredients that you will need are:

  • 5 x large potatoes.
  • 2 x large eggs or 3 small.
  • 6 x spring onion.
  • 3 x table spoons of 97per cent fat free Mayonnaise.
  • 1/2 cup approx. of double smoked leg ham diced.
  • 3-4 sprigs of parsley chopped.


Method

Peel potatoes, wash and place in saucepan with cold water, bring to boil and simmer for 15-20 minutes until still firm not soft, remove from heat, drain, dry with paper towel and set aside to cool.

Boil eggs until hard approx. 10 minutes, set aside and let them cool.

In a large bowl place three table spoons of Mayonnaise .


Cut the potatoes in half lengthways, then cut each half lengthways about 4-5 cuts then cut into small cubes, place in Mayo and carefully stir until Potatoes are fully coated with Mayonnaise.


Cut eggs similar to potatoes ending with small pieces, place on top of Potatoes, season with Sea or Crystal Salt and Black Ground Pepper to taste.


Cut Ham into smallish cubes place on top of Eggs.

Chop Onion into small pieces place on top of Ham.


Carefully stir all ingredients together.


Place in a serving bowl.

Wash and dry parsley, chop finely and sprinkle on top. Don't stir parsley in until ready to serve.
Cover with Glad Wrap or Airtight lid and place in the Fridge for 3 - 4 hours until nice and cold. Leaving in fridge overnight works better but if you are strapped for time, a few hours will be ok.

Variations

You can try Variations of this Potato Salad Recipe.

On occasions I have used Canned Potatoes but the choice is yours, I personally prefer fresh Potatoes.
When using Canned Potatoes empty the liquid off and wash and dry the potatoes with paper towels.
The canned Potatoes tend to give a slightly different flavor to the Potato Salad.
You can also adjust the quantity of Mayo to suit your taste or use home made which ever you prefer.!

Potatoes. The ones I use are Nadine or Dutch Cream Potatoes which are Australian grown and great for boiling. Any good boiling potato will work well.

Spring onions can be replaced with red onions or white salad onions.

Ham can also be replaced with your personal choice, crispy bacon is also nice in place of ham just a little saltier.

This Potato Salad will keep in the Fridge, sealed for 2-3 days, if it lasts that long!

Potato Salad goes nicely with Seafood, Cold Cuts,chicken, ham, Steak, as a matter of fact it goes with just about anything :)

If you are not a meat eater it still tastes great without the Ham or bacon!
