How to make idlis

Rice- 3 cups

Black gram(udad dal)-1 cup


Step 1: Making the batter

Soak the rice and the black gram separately in water for two hours. Drain out the water. Grind into a thick paste. Grind till the batter is fine. Then leave the batter over night or for a sufficiently long period till the dough rises. Add salt. Once the wet flour has risen , store in the refrigerator.

Step 2:Cooking the idlis:

First oil the individual compartments of the idli stand. Then pour the batter into them. Fill as many compartments as you want to make idlis. Then place the stand in the cooker. Allow the steam to come out. Place a cup over the steam outlet and cook for 15 minutes. Do not pressure cook. After 15 minutes take out the idlis. The dish is now ready to serve.

Additional dishes associated with idlis:

1. Chutney

Grind some coconut and green chilies into a thick paste. Add salt. This is a simple chutney.

2. Sambhar

Soak some Toor dhal and pressure cook for 10 minutes. Soak some tamarind. Extract the essence of tamarind and add it to the cooked lentil. Add salt and chili powder plus fenugreek, mustard and turmeric. Boil for 5 minutes. The dish is ready.
