Recipe to make both oven baked and deep fried samosas

Hi Pankaj. Thanks for the really nice request. So you want to make hot samosas that are spicy and crispy. I will tell you the recipe and the exact way, as there is never any wrong time to prepare and eat samosas at home. I know it is chilling really hard over here in Delhi and even I wanted something hot. I also do not like buying junk food from outside and want them fresh and homemade just like you.

First of all, there are two major things which convert ordinary samosas in sexy hot and spicy ones and that are:

  1. The spicy masala and soft filling of samosa.
  2. Second one is the outer crispy cover of samosa.

For the spicy masala and soft filling of samosa

Cook some potatoes in the oven until they are soft. Then, peel them and cut them into small pieces. Heat some oil in a pan and put cumin seeds, green chilies, crushed garlic, grated ginger, turmeric, onions and some fresh coriander seeds. When the onions are slightly transparent, mix them with the cooked potatoes and add in salt and some amchur powder (dried and unripe mango which is used as a spice in India). Put in some garam masala (hot spice) if you want it to be sexy n spicy hot. Also, add some chili powder. Make it just the way you make potato curry.

Now for the outer crispy layer of samosa:

Go to a grocery shop or a supermarket and get rice papers from the frozen section. If you find them, then it is okay and if you could not find them, then make dough-like chapatis using maida flour, salt, water and oil. You should put more amount of oil if you want the outer layer to be crispy enough. Leave it for some time covered and then roll them out like chapatis and cut them into halves. Then in the center of one half of the puri, put the spicy potato masala you have made and bring close the other two ends of the semi-circle puri to give it a triangular shape.

After you have made the samosas complete (filled and sealed), keep it to dry for half an hour and then deep fry them in a kadai or pan and serve and enjoy with any kind of sauce, be it pudina or regular tomato sauce.

One more thing, there are some people who do not want to deep fry the samosas and rather want to use the oven, so here is a trick for oven-baked samosas.

Samosas can be baked in oven too. Just flatten the stuffed samosa a bit to make triangles, brush with oil and bake in preheated oven for 8-10 minutes both sides until brown and done. Though crispness of the samosa depends upon the fat content of the dough used, so even if baking, there should be enough oil in the dough to make them crisp.

So friends, this is the real technique to make super hot and sexy samosas, both deep fried and oven baked, which can be prepared for really hot and sexy people around there, just like Pankaj.....hahhahaha) who want sexy hot samosas that are crispy.

      My husband and I love Indian movies. We watched one recently where the guy and the girl were competing to see which one could wolf down the most samosas.
