How to make lentil cookies

1 cup cooked lentils

1 cup butter

1 cup of brown sugar

1 cup of flour

1 cup of oats

1 cup of chopped german chocolate

1 cup of sunflower seeds

3/4 cup of grape nuts

1 egg

1 tsp of baking powder

1 tsp of vanilla

pinch of salt

Lentil oat cookies

These cookies taste better fresh from the oven,in my opinion, the cooler they are the more the taste changes. We baked in small amounts only making what we would eat right away and refridgerated the rest until ready.


First cook the lentils until tender and strain. Once strained mash with a fork.

Preheat your oven to 350 degrees and grease your cookie sheets.

In a bowl cream the lentils, butter, and brown sugar together. Then mix in the egg. Next add the flour, baking powder, and vanilla. Then you'll want to stir in the remaining ingredients and mix well.

On your greased cookie sheet drop by the spoonful about 2 inches apart and bake for 11-13 minutes. Before removing from the cookie sheet flatten with a spatula. Once cooled enjoy.
