Hi my name is Lisa my families favorite meal that I make is Empanadas. First let me say that even though I am just a white girl I learned to make them from an old friend who's first husband was Cuban and second was Puerto Rican so she learned from her perspective mother in laws. And of course my hubby is half Puerto Rican and half Italian so I have had the opportunity to learn many different things in the kitchen.

I have an ingredient list for you and I will teach you just how I make the perfect beef empanada!

Ingredients

  • 1 pound Ground Beef, browned
  • 1small Green Pepper, chopped
  • 1 small Onion, chopped
  • 10-15 Green Olives, chopped
  • about 2 cups Cheddar Cheese, shredded
  • about 1 teaspoon Garlic Powder
  • few sprinkles Garlic Salt
  • about 1 teaspoon Adobo
  • just a few sprinkles Ground Cumin
  • 3 tablespoons Sofrito
  • 20 Empanada Shells
  • 1 packet Sazon
  • 1 small can Tomato Sauce
  • 1 teaspoon olive juice
  • Oil, canola or vegetable

Preparing ground beef

Now you should be ready to prepare your ground beef. Get a frying pan and a spatcula or if you have a chop meat chopper(For all you Pampered Chef Customers)

Place your ground beef in your frying pan and put temperature on medium,Start chopping ground beef as small as you like.

Now add all of your dry seasonings and mix through meat. Add your Sofrito and a little olive juice cook until no longer pink. Drain. and add a little tomato sauce and taste. If needed add a little more dry seasonings and let simmer until its no longer wet.

While your Ground beef is cooking

While your ground beef is cooking go ahead and chop your onions, peppers, and olives I put them together in a bowl. And get a separate bowl ready for your shredded cheese. I like to use the fine shredded cheddar cheese but you can use which ever you prefer.

Make sure that your Empanadas shells are defrosted.

Now get a few plates and forks and spoons and a clean flat surface to prepare your empanadas.

Time to prepare your Empanadas

Now have all of your ingredients lined up on your flat surface and get ready to prepare your empanadas.

You can start heating up your oil(medium heat) in either a deep fryer or a good frying pan, I like to use enough oil to cover the empanadas completely.

Now take one Shell and a few teaspoons or ground beef, a spoonful of the onion,pepper,oilive mix and a teaspoon of shredded cheese(use the amounts you prefer)

Now fold over the shell in half and grab a fork(one that wont bend) and press the ends on both sides of the shell so that they don't come separated while cooking and to make them look nice.

Repeat until all shells are completed.

Time to fry

Now that all of your empanadas are prepared for frying add them to the hot oil and fry 1-1/2 minutes each side or if deep frying watch appearance. Once the shells become bubbly in just a minute or so they will become golden brown.

Once all Empanadas are fried put them on paper towel to drain the grease

Add Hot sauce if needed and eat!!!!!!!!!!!1
