Recipe: How to make roasted tomatillo and poblano salsa

Roasted Tomatillo Salsa Recipe

Place three tomatillos (those are the little green tomatoes with a husk) on a cookie sheet. The tomatillos should be clean and without their husk.

Place two poblano peppers on the same sheet.

Brush everything with oil.

Place cookie sheet in oven at 375 for 35 minutes or until everything has a blackened skin.

Remove the blackened skin of the peppers and put everything in a food processor.

Add salt and 1 tbs. of fresh cilantro. Pulse until it makes a thick liquid.

Ways to use the salsa

I made this most recently to top some tacos de carnitas last night, but it is perfect for enchiladas con salsa verde. It can also be used as a salsa with chips or quesadillas.
