How to make Tomato and Eggs a yummy lunch

A quick lunch.

Want to make a quick, easy and nutritious lunch? This is one even my 15 month old loves. My mom used to make it for me when I was a young girl but I love it until this day.

4-5Tbsp Extra Virgin Olive Oil
28 oz Can of Ground Peeled Tomatoes (I use Pastene Kitchen Ready)
5 Large Eggs (beaten)
Crusty Bread for Dipping

Heat oil in a 12" saute pan (non stick). Add The can of tomatoes with large pinch of salt and fresh cracked pepper to taste. Cook on medium to medium low heat until it is reduced (about 20 mins), stirring frequently.

Once the tomatoes are reduced add the beaten eggs and stir until the eggs are cooked (about 2-3 mins). You can add another egg or two if you like a more eggy vs saucy consistency. I do but my husband is not a fan of too much egg so I put less.

That's it... once the eggs are cooked you are done. Divide among serving dishes and serve with crusty bread. This should serve 4 people as a small lunch or 2-3 if you have a hearty appetite.
