How to make your own simple Pasta dish with a Spicy Sausage Sauce
You can always add your own favorite ingredients to the dish to spice it up a little. Always make sure that you add your favorite rustic bread with this dish to make it delicious and sumptuous. I will provide you with a list of supplies that you will need for this great dish that is easy to find in your favorite grocery store. I always try to add different chesses to my pasta dishes to give it different flavors and aromas. I also used olive oil in my cooking because it is really healthy for the body. I use olive oil that is products of Italy because they tend to be really favorable and rich on the palate. You can use an oil of your choice to create this dish. I will also give you suggestions for various cheeses that you can use for this dish too. So let’s get started and have some fun cooking this dish!
- 2 tbsp. of Olive Oil (or your favorite oil)
- 1 Onion, chopped finely
- 1 Celery stalk, chopped finely
- 2 large Garlic cloves, crushed
- 1 fresh Red Chili, seeded and chopped
- 1lb of Italian Plum tomatoes , finely chopped
- 2 tbsp. Tomato Paste
- 1/3 Cup of Red Wine
- 1 tsp of Sugar( I use Florida Crystals Organic Sugar)
- 12 oz. Dried Tortiglioni pasta or pasta of your choice
- 6 oz. of Spicy Rind-less Salami
- Salt and Red Pepper or black pepper if you choose to use it
- 2 tbsp. of Parsley freshly Chopped, for your garnish
- Fresh Parmesan Cheese or your own choice of cheese
Now heat your olive oil in pan and then add your onion, celery, garlic and chili. Let your ingredients cook for about 10 minutes gently stirring them in your pan. Once they are softened then add your tomatoes, tomato paste, and red wine. As your ingredients are cooking, add your salt and pepper while you gently stir your ingredients in the pan. Cook all of your ingredients for 20 minutes and monitor your sauce to ensure that it stays at the right consistence of your choosing. At this point I like to add a little bit more crushed or chopped garlic for added flavor and boldness. Once your sauce is the right consistence for you then you can turn the heat off from under it while keeping the lid on it.
While your ingredients are cooking you can now begin to cook your pasta. I liked to cook my pasta until it is al-dente (firm but not starchy hard). So grab your pot and fill it up halfway with salted water and begin your boiling process. Now I may sometimes put a little bit of olive oil in my water so that when it reaches its boiling point and the pasta is put in it, the pasta will not become sticky or gummy. Once your water has reached its boiling point, drop your pasta into the water and let it simmer for 10-12 minutes or till its al-dente. Once your pasta fully cooked, drain the water of it and place it into a large serving bowl. Meanwhile, get your spicy salami and chop it into reasonable chunks then add them to your tomato sauce. Then pour your tomato sauce with the spicy sausage over your pasta in the serving bowl. Next grate your fresh Parmesan cheese over the top of your pasta. Lastly sprinkle your freshly chopped parsley over the top of your pasta and serve it to your guests. I hope that you and your family or guest enjoy this recipe for years to come!!!
