How to Cook Chicken with Bean Sprouts Stir-Fry
Quick & Easy Recipe That Can’t Go Wrong
Bean sprout is undoubtedly very healthful food, but is also not the tastiest treat. How about couple it with some chicken? This is actually a rather popular dish in southern China, where people commonly grow their own bean sprouts.
"Simple" is the key to this dish; and "Healthy" is its benefit. Of course, "Delicious" is what brings people to the table.
You can get the ingredients pretty much at any supermarkets. The preparation time varies, but you can typically get it done in as little as half an hour.
I always advocate flexibility in home-cooked meals. Nothing has to be exact, that is. So use your imagination, use alternatives wherever you see fit, and more importantly, surprise yourself and your guests!

Things You'll Need:
* Chicken breast meat, 1 lb
* Fresh bean sprouts, 3lb
* Scallions, 1 small bunch
* Fresh garlic, 4 - 5 cloves
* Soy sauce
* Cornstarch or all-purpose flour
* Oyster sauce (optional)
* Cooking oil
* Cooking wine (Optional)
Thoroughly wash bean sprouts and drain well;
Clean and cut scallions in 2 - 3 inch length;
Peel garlic, smash or dice;
Thoroughly clean chicken, slice across grain to desired bite size;
In large bowl, mix diced chicken with 1 tsp. salt, 1 tsp. sugar, 2 tbsp. soy sauce, 1 tbsp. cornstarch or all-purpose flour, 1 tsp. cooking oil, and set aside;
In small bowl, mix 2 tsp. salt, 1 tbsp. sugar, 3 tbsp. soy sauce, 1 tbsp. corn starch or all purpose flour, 1 tsp. oyster sauce (optional), 2 tsp. cooking oil, and set aside;
Heat wok or large pan; add garlic and 2 tbsp. cooking oil, spread with spatula until garlic turns golden;
Add chicken in wok, spread evenly and form a thin layer;
Flip chicken in 2 minutes; continue for additional 1 minute;
Add bean sprouts, stir and cover for 1 minute;
Uncover and stir again, then cover for additional 1 minute;
Remove cover, add scallions and mixture in small bowl; rinse small bowl with 1 tbsp. cooking wine or water and add to pan; stir until gravy thickens;
Serve hot with rice, for four to six.
Tips & Warnings
Use high heat at all time;
For novice, non-stick pan recommended;
Do not over-cook chicken;
Do not over-cook bean sprouts;
Use cooking wine for additional favor.
Cooking pan extremely hot while heating oil and garlic.
