Impossible Cheesecake Pie

Cheesecakes and cheesecake pies have become very popular. At one time there was just the New York style, which was so decadent. It's a thick, creamy and decadent cake with a graham cracker bottom crust and cherry topping.

Now there are so many flavors and types. Cheesecakes can take a little more time and a little pricy since you need at least 3 or 4 cream cheese packs and sweetened condensed milk and a lot of other ingredients. For that reason cheesecake pies started to hit the scene.

This is called "impossible" because it makes it's own crust. You don't need to make it and it's quick to make. Just right for after a dinner party when you are so busy making a lot of other foods. Hope you enjoy this recipe!

Other Options

  • You don't have to add the fruit topping and whipped topping if you don't want to. It just adds to it's lusciousness.
  • You can use blueberry pie filling
  • You can use apple pie filling
  • You can also use fresh fruit cut up and macerated with sugar. Just cup up your fruit such as strawberries and sprinkle sugar on them and let them sit for about an hour in the refrigerator.
  • You can use whip cream in the can or Cool Whip or whip up your own with heavy cream, a little vanilla and a little 10X (confectioner) sugar.


  • 3/4 cup milk
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1 cup sugar
  • 1/2 cup Bisquick Mix
  • 2 8 oz. packages cream cheese, cut in cubes and softened
  • 1 can cherry pie filling
  • Cheesecake Topping Recipe below

Directions

  1. Preheat oven to 350 degrees. Grease a 9" pie plate.
  2. Place milk, vanilla, eggs, sugar and Bisquick Mix in a blender. cover and blend on high 15 seconds.
  3. Add cream cheese, Cover and blend on high 2 minutes.
  4. Pour into pie plate. Bake until center is firm, 40 - 45 minutes, Cool Spread Cheesecake Topping carefully over top.
  5. Garnish with fruit and additional whipped topping.
  6. Garnishes are optional.

Cheesecake Topping

Mix 1 cup sour cream, 2 tablespoons sugar and 2 teaspoons vanilla extract until all is incorporated.

      I've saved this recipe to both Yummly and Pinterest, so now it's in three places so I can find it when I'm ready to try it. I haven't made an impossible pie in many, many years and I don't remember a cheesecake version. Love that this is so very simple. I'm all about simple, especially when it comes to dessert. Or any other recipe, actually. :) Thanks for sharing!

      Hi Peachpurple, Bisquick is a brand name for a certain flour. You can get it in the flour section of your grocery store, here anyhow, I don't know where you live. If you can't get it, you can substitute : 1 cup flour, 1 1/2 teaspoons baking powder, 1/4 teaspoon salt and 1 tablespoon of melted butter; mix it together. Adjust the amount according to your recipe.
