Pakora recipe

Ingredients (measuring cup used, 1 cup = 250 ml)

1 cup besan/gram flour

½ inch ginger, finely chopped

1 small to medium onion, finely chopped

1 green chili, chopped

2 tbsp chopped coriander leaves

2 to 3 pinch of baking soda water as required to make a thick flowing batter ( i used slightly more than ¼ cup of water) salt as required oil for deep frying the pakoras

How to make it :

1. Mix all the ingredients listed above except oil in a mixing bowl.

2. Stir with a spoon or wired whisk, to make a smooth and lump free batter.

3. Heat oil in a frying pan.

4. Let the oil become medium hot, then drop spoonfuls of the batter in the oil.

5. Fry the pakoras in oil till golden and crisp.

6. Drain the pakoras on paper towels to remove excess oil.

7. Serve the pakoras hot with coconut chutney or coriander chutney or tomato sauce.

Spicy Indian Chapli Kebabs

Prep time: 10 mins Cook time: 5 mins Total time: 15 mins

Serves: 24 kebabs


  • 2 pounds minced meat
  • 3 small or 2 medium red onions, finely chopped
  • 2 tomatoes, peeled, deseeded and finely chopped
  • 3 tbsp chopped coriander
  • 2 tbsp chilli flakes
  • 1 tbsp garam masala
  • 2 to 3 green chillies, finely chopped
  • 2 tbsp chopped ginger
  • 2 tbsp chopped garlic
  • 1 tbsp cumin
  • 2 tbsp flour
  • 1 egg
  • salt, to taste
  • cooking oil for grilling/shallow frying


  1. Mix together chopped onions, tomatoes, coriander, green chillies and minced meat.
  2. Add all the spices and mix well.
  3. Add one egg to this meat mixture and mix thoroughly. Add flour to this mixture to make the mixture less wet and more sticky so that the kebabs keeps their shape better.
  4. Make kebab paste with the meat mixture and keep aside.
  5. Heat a fry-pan/grill and add oil and place the kebab paste on the pan/grill. Cook both sides for 2-3 minutes or until brown.
  6. Serve with chutney, or you can even have it on it's own!


1. You can make these kebabs two ways - we chose to grill it but more commonly it's shallow fried in a fry-pan.

2. Add in more special indian ingredients such as coriander seeds and pomegranate seeds for an extra crunch.

3. Serve these with fresh tomato slices, onion slices and top it off with coriander.

4. These can be served with a chutney and naan or even rice. We actually love having these on their own!

Maida Pakora/ Flour Pakora


  • All purpose flour: 1 cup,
  • Semolina: 3 tbs,
  • Yogurt (Curd): ½ cup thick,
  • Onion: ½ cup chopped,
  • Green chilly: 2 chopped,
  • Crushed Peanuts: ¼ cup,
  • Baking Soda: A pinch,
  • Salt: To taste,
  • Oil: For deep frying


  1. In a mixing bowl pour flour, semolina yogurt, chilly, salt, baking soda and some water.
  2. Mix it together to make a thick batter.
  3. Now add chopped onions and crushed peanuts and mix again.
  4. Heat up oil to medium-high heat. Drop small ball size dumplings in the oil.
  5. Turn them occasionally till they become golden brown.
  6. Serve them with chutney or sauce of your choice.


1. While making batter mix little water at a time as we are looking for thick batter.
2. Don’t make the batter ahead of time otherwise pakoras will absorb lot of oil while frying.
3. Be sure that oil is not very hot while frying the pakoras otherwise they will not cook from inside.

Paneer cutlet | paneer tikki recipe

30 mins to make, serves 3-4



  • 2 Green chilies
  • 1 Onion, medium
  • 3/4 cup Potato or sweet corn


  • 1 tsp Ginger garlic paste

Baking & Spices

  • 1/8 tsp Pepper, powder
  • 1 Salt
  • 1/8 tsp Turmeric

Nuts & Seeds

  • 1 Pinch Cumin

Bread & Baked Goods

  • 2 slices Bread


  • 1 cup Paneer


  • 20 Pudina leaves or curry


  1. Dip bread slices in water, squeeze remove excess water.
  2. Mix all the ingredients well till everything is blended well.
  3. Heat a tawa and tawa fry them on a medium flame too with little oil.
  4. For baking in oven, preheat the oven to 220C
  5. Prepare a baking tray, grease it
  6. Make small thin patties (appr ¼ inch), and smear little oil on them
  7. Bake for 10 to 15 mins, flip them to the other side.
  8. Bake paneer cutlet for another 10 to 12 mins.

Corn Flakes Chivda (Spicy Indian Snack Mix)

13 mins to make, serves 1


Vegan, Gluten free


  • 1/4 cup Golden raisin
  • 1/2 cup Peanuts

Breakfast Foods

  • 3 cups Corn flakes


  • 1 tsp Lime juice

Baking & Spices

  • 1 tsp Red chili powder
  • 1/2 tsp Sugar
  • 1/3 tsp Turmeric, powder

Oils & Vinegars

  • 2 tbsp Oil

Nuts & Seeds

  • 1/2 tsp Cumin seed


  1. Heat oil in a pan, then put cumin seeds. Let them sizzle, then add the raisins (or other dried nuts). Stir for a minute.
  2. Let the oil be on very low heat, stir in the chili and turmeric powder, salt, sugar.
  3. Mix in lime juice with the spices.
  4. Fold in the cornflakes on low heat for 3-4 minutes until they are deliciously coated with the spices. Let it cool before storing or serve.

Coriander chutney

10 mins to make, makes 1


Vegan, Gluten free, Paleo


  • 1 cup Coriander leaves/cilantro, fresh
  • 1/2 inch Ginger
  • 1 Green chili


  • 1 tsp Lemon juice

Baking & Spices

  • 1 Salt or rock salt or sea salt as required, black

Nuts & Seeds

  • 1/2 tsp Cumin


Mix everything in a blender for 10 mins.

Serve with your snacks.

Aloo Tikki | Potato Tikki

35 mins to make, makes 10-12



  • 1/4 tsp Chilli, red powder
  • 1/2 tsp Ginger, fresh
  • 3 Potatoes / aloo, medium-sized

Baking & Spices

  • 1/4 tsp Garam masala, powder
  • 1 Salt
  • 1/4 tsp Turmeric, powder

Oils & Vinegars

  • 1 Oil

Bread & Baked Goods

  • 2 Bread, small slices


  • 1/2 tsp Amchur powder / dry mango powder

Homemade Garlic Naan Bread

3 hrs to make, makes 4 loaves




  • 10 cloves Garlic
  • 3/4 cup Green onion

Baking & Spices

  • 5 1/2 cups All purpose flour
  • 1/4 cup Cornmeal
  • 1 tbsp Kosher salt
  • 2 tsp Star active dry yeast, Red

Oils & Vinegars

  • 1 Olive oil


  • 2 1/2 cups Water


  1. Fill a medium sized bowl with the water and sprinkle the yeast on top of it.
  2. Whisk the yeast until it's dissolved.
  3. Add 3 cups of the flour and stir with a heavy spatula or wooden spoon until smooth.
  4. Add the salt and then the remaining flour. Stir again until well combined.
  5. Dust a clean work surface with some flour and dump out the dough.
  6. Start to knead the dough dusting with more flour if things get sticky.
  7. Once the dough is a round ball, about 5-7 minutes of kneading, place the dough back into the bowl it came from making sure to coat the bowl with a little olive oil.
  8. Cover the dough and let rise in a warm area for 2-3 hours or until doubled in size.
  9. Once the dough is ready, preheat your oven to 550 degrees or as hot as it can go if not that high.
  10. Place a pizza stone or a large upturned baking tray on the top shelf of the oven as it heats up. Dust it with a little of the corneal.
  11. Transfer the dough to a floured surface and punch the air out of it. Cut the dough into 4 pieces.
  12. Using your finger tips press each piece of dough into an oval shape about 8 inches long and 6 inches wide.
  13. Brush the dough with some olive oil and rub some minced garlic over the surface.
  14. Sprinkle with the green onion and transfer to the pizza stone or baking tray.
  15. Bake in the oven for about 8-10 minutes, longer if you like it more crusty.
  16. Once the naan has finished baking, transfer it to plate and cover with a clean towel.
  17. Proceed the same way with the other dough pieces until all of them have been baked.
  18. The bread is best served warm and can be reheated covered in foil in a 350 degree oven.

Easy Crescent Samosa (Indian Style Sandwiches)

25 mins to make, serves 1




  • 1 cup Carrot, cooked
  • 1/4 tsp Cilantro, dried
  • 6 Garlic clove
  • 1/4 tsp Ginger, ground
  • 1 Onion, small
  • 1/2 cup Peas, canned sweet
  • 2 cups Potatoes, cooked


  • 1/3 cup Honey
  • 1 tbsp Lemon juice
  • 8 tsp Soy sauce

Baking & Spices

  • 1 tsp Curry powder
  • 1 dash Red pepper flakes
  • 1 pinch Red pepper flakes
  • 1/4 tsp Salt
  • 1/4 tsp Turmeric

  • 1 tbsp Olive oil

  • 1/2 tsp Cumin

  • 2 (8 ounce) packages Crescent rolls


  • 2 tbsp Water
