Indian style scrambled eggs

For one person used 2 eggs

For Two persons use 3 eggs

I use 5 eggs for about 4 or more people


Eggs as per above

1/2 onion chopped in a frying pan (use a whole onion if cooking for 4 people)

l - 2 fresh chillies (chopped add along with the onion)

About 5 table spoon for cooking oil (use can use olive oil)

Salt and pepper to taste

1/2 chopped tomatoes (or l whole one if cooking for 4 or more people)


l. fry onions and chillies in non stick frying pan. (not brown)

2. Add chopped tomatoes and fry for a few more minutes until they are slightly soft

3. In a bowl crack eggs add salt and pepper...beat with fork.

3. Add the eggs stirring until the scrambled eggs are cooked.

Alternatively: instead of scrabbled you can use the above but make pancake style eggs as follows:-

When as per above - at the stage when you have added the add the cooked onions mixture into the beaten eggs and mix.

Then you add a bit of butter on the frying pan - melt on low heat....and add enough mixture to make flat pancakes... (At this stage you can add grated cheese) can at this stage also fold the pancake in half or fold two sides to the middle whilst it is cooking..

If you prefer you can just turn the whole pancake over and cook and then serve hot...

You can serve the above dishes with buttered toasted bread.

or Indian style tasty bread add a blob of butter in a frying pan put bread and whirl it around so the melted butter is spread across the bread and lightly cook until it is crispy and light brown...turnover and do the same.
