Tahu isi is well-loved Indonesian tofu that is filled with various vegetables such as carrot, cabbage, bean sprouts, spring onions and or shrimp. It comes in cubes or triangle shape with crunchy batter and tender-crisp filling. It is usually eaten with fresh hot chili paddy or hot chili sauce. It can be bought from street vendor or any small "kedai makan" or canteen. Tahu isi also known as tahu susur, tahu berontak or gehu (tahu tauge or bean sprouts tofu).

This popular street food is served as snack between meals, finger foods or sometime it is eaten with rice. Here is how to make tahu isi. It's very easy and inexpensive. For vegetarian version of stuffed tofu, just omit the shrimp. Serve it hot or warm with fresh hot chili pepper, the Indonesian way.

What You Need

Serves 6 - 8


24 pieces fried tofu pouch

oil for deep frying


1 1/2 cup flour

1 spring onions, chopped

3 cloves garlic, finely minced

1 tsp salt

1/4 tsp sugar

2 cups water


1 1/2 cup shredded cabbage

1 cup shredded carrot

1 1/2 cup bean sprouts

1/3 cup chopped spring onions

1/2 cup chopped shrimp

3/4 tsp salt

1/4 tsp sugar

a pinch of white pepper

2 tbsp cooking oil

2 shallots, finely minced

3 cloves garlic, finely minced

How to Make

  • In a mixing bowl, combine flour, salt, spring onions, water and minced garlic. Stir to mix well. Set aside.
  • Heat a wok over high heat. When hot, add 2 tablespoon of cooking oil. Add minced garlic and shallot. Stir-fry about 30 seconds or until fragrant.
  • Add shrimp and stir fry about 1 minute or until the shrimp have turned pink. Throw the carrot, cabbage, spring onions, bean sprouts in. Stir-fry until the vegetables are done but tender-crisp. Sprinkle on sugar, salt and pepper. Stir to combine. Remove from the heat.
  • Transfer the filling to a colander. It will drain the extra juice or moisture of the fillings. Drain and then transfer to a bowl.
  • Meanwhile, use a knife to make a slit on the side of each tofu pouch. Set aside.
  • Fill in each tofu pouch with one or two tablespoon of the filling mixture.
  • In a wok, heat the cooking oil over high heat. Dip the stuffed tofu in the batter, then drop gently into the hot oil. Fry about 6 to 8 tofu at one time. It will depend on your wok size. Fry until the tofu is golden brown and crispy.
  • Remove from the oil. Drain. Serve it warm with hot chili sauce.
