Italian Cream Pie And Italian Cream Cake
Italian Cream Cake Originated In The American South
Most people will tell you that there is really nothing Italian about an Italian Cream Cake. The first mention of a Italian Cream Cake was in the Mobile Alabama Newspaper around 1909 so the cake most likely wasn't invented in Italy but probably in the southern United States.
I have found the cake made many different ways but the recipe for the Italian Cream Cake here on this page is oh so delicious so you really don't need a different recipe. If your having a large party or gathering consider making one large Italian Cream Cake and surround it with a multitude of Italian Cream Cake cupcakes.
I have also made Italian Cream Cake sheet cakes and they were loved by the people the Italian Cream Cake sheet cake was served to. At one point in time I even made a huge Italian Cream Cake Wedding Cake that was a huge hit.
Think outside the box and you can come up with all kinds of things you can do with Italian Cream Cake. Try serving your Italian Cream Cake with Vanilla Ice Cream.

Italian Cream Cake
My late Mother Virginia Walker made the best Italian Cream Cake and I have been trying to make this incredibly tasting cake for years now. This is a made from scratch cake but even the novice cake maker can make this cake if they will just slow down and take their time. However let me caution you here that your oven must cook at the right temperature for this cake to turn out right. And if your going to be baking on a regular basis you really should equip your oven with a heavy duty oven thermometer.
I also buy and use the best quality cake pans for my cakes and I line my cake pans with parchment paper cut to fit the pans so my cakes come out of my pans easily. But baking parchment paper for the best results. You can just peel the parchment paper off your cake layers carefully once you have taken your cake layers out of the pans.
In order to make the Italian Cream Cake you will need the below ingredients.
1. One Teaspoon Baking Soda.
2. One Cup Buttermilk.
3. One Half Cup Butter. , ( Use Real Butter Softened To Room Temperature )
4. One Half Cup Vegetable Shortening.
5. Two Cups White Granulated Sugar.
6. Six Large Eggs.
7. One Teaspoon Vanilla Extract.
8. One Cup Fresh Frozen Coconut.
9. One Teaspoon Baking Powder.
10. Two Cups All Purpose Plain Flour.
11. Eight Ounces Cream Cheese.
12. One Half Cup Real Butter Softened To Room Temperature.
13. One Teaspoon Vanilla Extract.
14. One Cup Fresh Frozen Coconut Thawed To Room Temperature.
15. Four Cups Confectioners Sugar.
16. Two Tablespoons Cream.
17. One Half Cup Fine Chopped Walnuts.
You want to start out by making sure that your oven is pre-heated to 350 degrees. Spray your three cake pans with spray vegetable spray and line each with a cut out liner of baking parchment paper.
In a small bowl dissolve the baking soda in the buttermilk and set aside.
In a large bowl you are going to want to mix together 1/2 Cup Softened Butter, 1/2 Cup Shortening, and white granulated sugar and mix together until creamy and fluffy. Now you will want to mix in the large eggs, the buttermilk, 1 teaspoon vanilla extract, 1 cup coconut, baking powder and the flour. Stir with a hand mixer until it is very well mixed. Then pour your batter out into the prepared pans.
You will now want to bake in the pre-heated oven for 30 - 35 minutes until a toothpick inserted into the center comes out clean. Allow to cool slightly before you remove from the pans and carefully remove the bakers parchment paper.
You will want to add your frosting ingredients to a large bowl one item at a time and beat with a hand mixer until you have it all mixed together very well. You then want to spread the frosting between and on top of your cake layers. Sometimes I toast coconut and pat it onto the outside of the frosting and sometimes I don't. Some people really like the toasted coconut on the cake and some people like it made with out toasting the coconut. try it both ways and see how you like it. You can also add other decorations to the cake and dress it up however you like.

Italian Cream Pie
Almost everyone has heard of Italian Cream Cake but how about Italian Cream Pie. If you like to bake and your looking for something extra special this delicious pie may be just what your looking for. Some people make a crust for this pie but here we are going to use a regular graham cracker crust pie shell for our pie. You will in fact need two as this will make two of these delicious pies. And it tastes absolutely wonderful. Very much like the Italian Cream Cake above.
For Your Filling You Will Need.
1. Sixteen Egg Yolks
2. Two Cups Flour.
3. Two Cups White Granulated Sugar.
4. Two Quarts Whole Milk.
5. One Teaspoon Ground Cinnamon.
6. Eight Tablespoons Cocoa.
7. One Teaspoon Lemon Juice.
Mix all your filling ingredients in a large bowl with an electric hand mixer until they are well mixed. Divide your filling between your two graham cracker pie crusts and bake in a pre-heated 350 degree oven for 35-40 minutes until a toothpick inserted in the center comes out clean. Remove the pies from the oven and allow them to cool completely.
In a bowl beat 16 ounces cream cheese with one cup fresh thawed frozen coconut until the two are very well mixed together. Divide your topping out between your two pies and keep in the refrigerator until you slice and serve. You can toast coconut to go on top of your pies if you wish.
