Italian Sausages With Peppers

Today were going to go back to a old Italian classic sausages & peppers using real Italian sausage and fresh bell peppers and the twist to the flavor is adding a little wine and some sweet onions.

Italian Sausages With Peppers

Italian sausage and peppers when I think of this pair I think of one of the great old school classics were food was really simple but taste so good that it made you go back for more, what i want to share with you today is a simple twist to some great tasting sausage with peppers and the twist is that I use a little wine and sweet onions to enhance the flavors.

Italian Sausages With Peppers

Ingredients

2 red peppers

2 green peppers

2 yellow peppers

1 medium sweet onion

18 Italian sausages

Olive oil

2 cloves of garlic, finely chopped

Sea salt to taste

1 tablespoon of red wine

1 teaspoon of vinegar

2 tablespoons of chopped Italian parsley

Methods

To begin

Rinse off all your peppers place them on a sheet pan and put the peppers under the broiler until they char and the skin starts to turn black and burst, when they do that remove them from the broiler let them cool enough to touch and then scrape off the skin remove the seeds and cut them in strips while you are cutting you can also peel your onion and cut it into strips

Using a large fry pan add your Italian sausage and blanch in boiling water for 7 to 10 minutes at this point drain off any excess water then add 4 tablespoons of olive oil cook on low heat and slowly until almost done.

While the Italian sausage are cooking add enough olive oil to coat he bottom of a heavy skillet heat the oil and add the garlic, onion and peppers and cook the vegetables until they are just about tender add sea salt to taste and add the wine and the vinegar and parsley then the Italian sausage give it 2 more minutes together then serve and enjoy.

They to making this entree really tasty is cooking everything nice and slow and by the way it is really so good with grits.

      Blueheron your right on point a good smoked sausage would go great and adding tomatoes would really enhance the flavor thank you for your comments.

      Trusouldj sound like a making of a good gumbo with the sausage and the shrimps either way it's made sausage and peppers are a very good dish thank you for the comments.

      I make a variation of this dish, but I slice the sausage and don't use wine. And in the Summer, I try to put shrimp in the mix. This looks sooooooooo delicious.

      Sausage and peppers are an old favorite recipe of mine, served to me for the first time by friends back in the 1970s, and it's long been a family favorite. Super fast and easy! It is also a great, easy meal to make on a camping trip. Personally, I always used a good smoked sausage and added a can of tomatoes at the end.
