Yields: serves 8 to 10 people


  • 3 garlic cloves
  • 3 onions, large
  • 2 celery sticks
  • 2 carrots, large
  • 2 potatoes, large
  • 100g french beans
  • 100g courgettes
  • 60g butter
  • 50ml olive oil
  • 60g rindless fatty bacon, finely diced
  • 100g tomatoes, chopped
  • 1.5 litres vegetable of chicken stock
  • 2tbsp tomato puree (paste)
  • 1 bunch fresh basil
  • 100g parmesan cheese rind
  • 85g dried spaghetti, broken
  • salt
  • pepper
  • parmesan cheese, grated


  1. Finely chop the garlic, onions, celery, carrots, potatoes, beans and courgettes.
  2. Heat the oil and butter together in a large saucepan, add the bacon and cook for 2 minutes, then throw in the celery, carrots and potatoes and fry for another 2 minutes.
  3. Add the beans to the pan and fry for 2 minutes. Stir the courgettes in and fry for another 2 minutes. Cover the pan and cook all the vegetables, stirring frequently for 15 minutes.
  4. Add the stock, tomatoes, tomato puree, basil and cheese rind. Season to your taste. Bring to the boil, lower the heat and simmer for an hour. Remove and discard the cheese rind.
  5. Add the spaghetti pieces to the pan and cook for 20 minutes. Serve in large soup bowls and sprinkle with the Parmesan cheese.
