Jamaican Red Beans And Rice Recipe
You Will Need For Your Recipe
1. 1 Pound Of Dry Red Kidney Beans Soaked In Water Overnight.
2. 1 1/2 Quarts Of Chicken Broth.
3. 2 Cups Coconut Cream.
4. 2 Tablespoons Dry Thyme Leafs.
5. 1 Teaspoon Ground Allspice.
6. 2 Green Onions Including Tops Chopped Fine.
7. 1 Cup Purple Sweet Onion Diced Fine.
8. 2 Tablespoons Fresh Minced Garlic.
9. 1 Teaspoon Black Pepper.
10. 1 Teaspoon Ground Sea Salt.
11. 1 Tablespoon Brown Sugar.
12. 1 Small Scotch Bonnet Pepper Including Seeds Diced Fine.
You again want to start off by soaking your kidney beans over night covered with water. After you soak them over night drain and wash them with cold running water and add them to your stock pot.
Scotch Bonnet Pepper Warning
Scotch Bonnet Peppers are extremely hot but they do add a lot of fire and flavor. You want a small one for your beans and you want to pull off the stem and slowly chop it up and put it into your stock pot where you are going to cook your beans. Avoid contact with the pepper as much as possible and wash your hands well after you chop it up.
Okay you should now have your beans and your scotch bonnet pepper in your stock pot. Add all of your other ingredients and slowly bring the stock pot up to a boil. After you have the pot at a boil reduce heat to medium and cook for 2 1/2 to 3 hours stirring often. If you find you need more liquid add more chicken broth not water.
Your going to end up with a very delicious rich creamy bean soup and some of the most delicious beans you will ever taste. When your beans get near done you want to cook a pot of hot buttered white rice and serve your red beans over the hot buttered white rice.
If your scared or don't want to mess with the scotch bonnet pepper substitute a tablespoon of ground cayenne pepper for it.
